Air Fryer Balsamic Roasted Vegetables

These balsamic vegetables are marinated then air fried, for a healthy and delicious side to serve alongside your main course! Feel free to adapt the recipe using any veggies you’ve got on hand!



  1. In a large mixing bowl, combine olive oil, balsamic vinegar, brown sugar, soy sauce, Dijon mustard, and pepper.
  2. Stir in vegetables, completely coating them.
  3. Refrigerate the vegetables and allow them to marinate for 30 minutes.
  4. Spray air fryer basket with olive oil and cook at 400º Fahrenheit for 8 minutes.
  5. Stir or shake and cook for another 5 minutes or until veggies are tender.
