Air Fryer Zucchini Fries

Thinly sliced Panko-crusted zucchini air fried until golden and crispy. Low in carbs and so much healthier than French fries!


  • 2 medium zucchini
  • 2 eggs, beaten
  • 1/2 cup Panko bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon Italian seasoning


  1. Prepare your air fryer basket by spraying it with olive oil.
  2. Cut ends off of zucchini and cut them in half. Slice them into thin sticks about 3-4 inches long and  1/2 inch thick.
  3. In a small bowl, combine bread crumbs, Parmesan cheese, salt, pepper, paprika, garlic powder and Italian seasoning.
  4. Beat eggs in a separate small bowl.
  5. Dip the wedges into the beaten egg and then coat them with the bread crumb mixture.
  6. Place breaded wedges in greased air fryer basket.
  7. Air fry at 350º Fahrenheit for 8-10 minutes or until fries are golden brown.
  8. Enjoy immediately.


To bake these zucchini fries in the oven instead of an air fryer, simply place on a parchment-lined baking sheet and bake for 25-30 minutes at 425º Fahrenheit or until the zucchini fries are golden and crispy.
