Coconut Poke Cake

Coconut Poke Cake

A fluffy, moist cake infused with Cream of Coconut and topped with a light and airy cream cheese frosting.

Ingredients

Instructions

  1. Prepare boxed cake as directed and remove from oven.
  2. While still warm, poke holes into the cake (I used a wooden skewer).
  3. In a bowl, mix together Cream of Coconut and sweetened condensed milk.
  4. Pour the coconut mixture over the warm cake.
  5. Allow to cool.
  6. Frost when cooled and refrigerate for at least 2-3 hours.
  7. FOR THE FROSTING
  8. Mix together the cream cheese and sugar.
  9. Add the heavy cream and mix on high until thickened.
  10. Mix in the vanilla extract.
