Watermelon Jell-O Cupcakes

These fun and fruity cupcakes play off of the look of a slice of watermelon and are infused with watermelon flavor throughout the cake and frosting. The mini chocolate chips on top may look a little like seeds, but you won’t need to spit them out! An adorable summer dessert!



  1. Prepare cupcakes according to box directions.
  2. Allow cupcakes to cool and poke holes in each cupcake.  I use the end of a wooden spoon.
  3. Bring water to a boil and stir in Jell-O powder until completely dissolved.
  4. Pour Jell-O mix over each cupcake into the poked holes.
  5. Prepare frosting by beating butter and powdered sugar together.  The consistency will be dry.
  6. Add watermelon drink mix and milk.  Beat again until frosting is smooth.
  7. If frosting is too thin, add more powdered sugar.  If it is to thick, add a little more milk.
  8. Transfer frosting to a large ziplock bag and snip a corner off.  Pipe frosting on each cupcake, adding chocolate chips immediately before frosting hardens.
