Very Berry Popsicles

Very Berry Popsicles - Fresh strawberries swirled with blackberries and lemon make these homemade popsicles a truly refreshing treat!

Ingredients

  • 6 ounces blackberries
  • ½ cup water divided
  • ½ cup sugar divided
  • 8 ounces strawberries
  • 1 tablespoon lemon juice
  • 6 popsicle sticks

Instructions

  • Blend blackberries and half of the water and sugar until smooth. Set aside.
  • Clean out the blender.
  • Blend strawberries, remaining water and sugar and lemon juice until smooth.
  • Fill popsicle molds halfway with strawberry mixture.
  • Top off molds with blackberry mixture.
  • Use a butter knife to push the blackberry down into the strawberry layer to create a swirl effect.
  • Freeze for 30 minutes.
  • Add sticks to popsicles.
  • Freeze for another 8-10 hours.

Notes

  1. Layering Technique: To achieve a visually appealing swirl effect in your popsicles, pour the blackberry mixture over the strawberry mixture in the popsicle molds. Then, use a butter knife or skewer to gently swirl the two mixtures together, creating a marbled effect. Be careful not to overmix, as you want distinct layers with a beautiful swirl pattern.
  2. Consistency Check: Before adding the popsicle sticks, insert them into the partially frozen popsicles to ensure they stand upright. This prevents the sticks from sinking or tilting as the popsicles freeze completely. Adjust the position of the sticks if necessary to ensure they are centered in each mold.
  3. Easy Removal: To remove the popsicles from the molds without breaking them, run warm water over the outside of the molds for a few seconds. This helps loosen the popsicles from the molds, making them easier to slide out. Gently wiggle the sticks and pull on them to release the popsicles from the molds intact, ready to enjoy!
