Ingredients

For the Avocado Wedges

  • ½ cup all-purpose flour
  • 1 ½ teaspoons garlic pepper
  • 2 large eggs beaten
  • ¾ cup Panko crumbs
  • 2 avocados cut into 4 wedges each

For the Garlic Aioli Dipping Sauce

  • 1 cup light mayonnaise
  • ½ tablespoon freshly-squeezed lemon juice
  • ¼ teaspoon salt
  • 3 cloves garlic crushed

Instructions

  • Combine flour and garlic pepper in shallow baking pan.
  • Add beaten eggs to another shallow dish.
  • Place Panko crumbs in a third shallow dish.
  • Dredge avocado wedges in flour mixture, eggs and then Panko crumbs.
  • Apply non-stick cooking spray to air fryer basket.
  • Place avocado wedges in air fryer basket.
  • Spray avocado wedges with non-stick cooking spray.
  • Cook at 400º Fahrenheit for 7-8 minutes, flipping wedges halfway through cooking.

For the Garlic Aioli Dipping Sauce

  • As wedges cook, whisk together mayo, lemon juice, salt and garlic in a small bowl.
  • Serve with avocado wedges.

Notes

  1. Avocado Preparation: When cutting the avocados into wedges, choose ones that are ripe but still firm. This ensures that the avocado wedges hold their shape during the dredging and cooking process. To easily cut the avocados into wedges, slice them in half lengthwise, remove the pit, and then slice each half into quarters.
  2. Dredging Technique: To achieve a crispy coating on the avocado wedges, ensure each wedge is thoroughly coated in the flour mixture, beaten eggs, and Panko crumbs. Use one hand for dipping the avocado wedges in the wet ingredients (flour mixture and beaten eggs) and the other hand for coating them in the dry ingredients (Panko crumbs). This prevents the mixture from clumping and ensures an even coating on each wedge.
  3. Garlic Aioli Dipping Sauce: While the avocado wedges are cooking, prepare the garlic aioli dipping sauce. Whisk together the light mayonnaise, freshly squeezed lemon juice, salt, and crushed garlic in a small bowl. Adjust the amount of garlic according to your preference for a stronger or milder garlic flavor. Serve the garlic aioli alongside the crispy air-fried avocado wedges for a delicious dipping experience.
