Preheat oven to 350º Fahrenheit.
Prepare a bread pan by lining it with parchment paper.
Spray parchment paper with nonstick cooking spray.
In a small bowl, combine brown sugar and 1 teaspoon cinnamon. Set aside.
In a medium bowl, add chopped apples. Sprinkle 2 tablespoons sugar and 1 teaspoon cinnamon over top.
Stir until apples are well-coated. Set aside.
In a large mixing bowl, beat butter and ⅔ cup sugar together until fluffy.
Add eggs and vanilla and beat again until smooth.
In a separate bowl, whisk together flour, baking powder, and salt.
Pour flour mixture into batter and beat.
Add ½ cup milk and mix until uniform throughout.
Pour half of the batter into the prepared bread pan.
Sprinkle half of the apples over top of batter and then half of the brown sugar/cinnamon mixture.
Pour remaining batter over top, then remaining apples and remaining brown sugar/cinnamon mixture.
Bake for 1 hour or until a toothpick comes out clean.
Allow the bread to rest for 15 minutes before removing from the pan.
