Apple Cinnamon Fritter Bread

Moist, delicious homemade quick bread with chunks of juicy apples and layers of brown sugar and cinnamon swirled throughout - drizzled with a sweet vanilla icing.

Ingredients

For the Bread

  • cup brown sugar
  • 2 teaspoons ground cinnamon divided
  • 2 Granny Smith apples peeled and chopped
  • cups sugar + 2 tablespoons divided
  • ½ cup butter softened
  • 2 large eggs
  • 1 ½ teaspoons vanilla extract
  • 1 ½ cups flour
  • 1 ¾ teaspoons baking powder
  • 1 teaspoon salt
  • ½ cup milk

For the Glaze

  • 1-3 tablespoons milk divided
  • 1 cup powdered sugar

Instructions

For the Bread

  • Preheat oven to 350º Fahrenheit.
  • Prepare a bread pan by lining it with parchment paper.
  • Spray parchment paper with nonstick cooking spray.
  • In a small bowl, combine brown sugar and 1 teaspoon cinnamon. Set aside.
  • In a medium bowl, add chopped apples. Sprinkle 2 tablespoons sugar and 1 teaspoon cinnamon over top.
  • Stir until apples are well-coated. Set aside.
  • In a large mixing bowl, beat butter and ⅔ cup sugar together until fluffy.
  • Add eggs and vanilla and beat again until smooth.
  • In a separate bowl, whisk together flour, baking powder, and salt.
  • Pour flour mixture into batter and beat.
  • Add ½ cup milk and mix until uniform throughout.
  • Pour half of the batter into the prepared bread pan.
  • Sprinkle half of the apples over top of batter and then half of the brown sugar/cinnamon mixture.
  • Pour remaining batter over top, then remaining apples and remaining brown sugar/cinnamon mixture.
  • Bake for 1 hour or until a toothpick comes out clean.
  • Allow the bread to rest for 15 minutes before removing from the pan.

For the Glaze

  • Mix powdered sugar and 1 tablespoon milk in a small bowl.
  • Slowly add more milk until glaze reaches your desired consistency.
  • Drizzle over top of bread and serve.

Notes

  • Add parchment paper to your baking dish for easy removal of your bread. 
  • You can store this bread in the fridge or on the counter. It will last a week in the refrigerator and three days at room temperature. 
  • It will last in the freezer for up to 6 months.
