Best Apple Cake Recipe

Moist and buttery cake filled with chunks of sweet apple and topped with a wonderfully delicious vanilla and brown sugar glaze.

Ingredients

For the Cake:

  • 1 cup vegetable oil
  • 2 cups sugar
  • 3 eggs
  • 3 cups flour
  • 1 teaspoon baking soda
  • 2 teaspoon vanilla extract
  • 1 cups chopped pecans
  • 3 cups peeled and chopped apples

For the Frosting:

  • ½ cup butter
  • 1 cup brown sugar
  • ¼ cup evaporated milk
  • ½ teaspoon vanilla

Instructions

  • Preheat oven to 350ºF. 
  • Grease a 9 x 13 baking dish.  Set aside
  • Combine oil, sugar, and eggs. 
  • Stir in flour and baking soda. 
  • Add vanilla, pecans, and apples and stir well.
  • Spread batter in prepared pan.
  • Bake for 45-50 minutes or until center of cake is set.  Cool for 2 hours. 
  • To prepare frosting, add all ingredients to a medium saucepan.
  • Over medium heat, bring to a boil for 2 minutes, stirring continuously. 
  • Set pan in bowl filled with ice water until it thickens.
  • Beat or mix icing until you are able to spread it.
  • Spread it over cake and serve.

Notes

  • ¼ to ½ inch chunks of apple work best for this recipe.
  • Granny Smith, Honey Crisp and Pink Lady are my go-to apples for Apple Cake. 
  • To store leftover cake, place it in the fridge for up to 5 days.
