⅓cupheavy cream
½cupsour cream
2tablespoonsbutter
1cupcheddar cheeseshredded
1 ½teaspoonssalt
1 ½teaspoonspepper
For the Potato Toppings
1cupfreshly grated cheddar cheesedon't use packaged cheese; it will clump when melting
2cupssteamed broccoli
1cupdiced cooked hamwarmed
½cupbacon piecesI cheat and buy the bagged kind :)
½cupfresh green onionschopped
For the Cheesy Broccoli Sauce
¼cupbutter
¼cupall-purpose flour
½teaspoonsalt
¼teaspoonpepper
1 ¾cupsmilk
1cupshredded cheddar cheese
1cupsteamed broccolicut into tiny pieces
Instructions
For the Potatoes
Microwave potatoes as directed on package.
Transfer to large bowl, add butter, heavy cream, sour cream, cheese, salt and pepper.
Mash until ingredients are well combined.
Divide mashed potatoes between bowls.
Top with grated cheese, steamed broccoli, ham, bacon pieces and green onions.
Drizzle with cheesy broccoli sauce.
For the Cheesy Broccoli Sauce
In a saucepan over medium heat, melt butter.
Stir in flour, salt and pepper until smooth.
Add milk gradually and bring to a boil.
Stir constantly for 2 minutes or until thickened.
Add the cheese and stir until melted.
Add the cooked broccoli pieces.
