Ingredients

For the Potatoes

  • 1.5 pound bag Side Delights® Steamables™ Red Potatoes
  • cup heavy cream
  • ½ cup sour cream
  • 2 tablespoons butter
  • 1 cup cheddar cheese shredded
  • 1 ½ teaspoons salt
  • 1 ½ teaspoons pepper

For the Potato Toppings

  • 1 cup freshly grated cheddar cheese don't use packaged cheese; it will clump when melting
  • 2 cups steamed broccoli
  • 1 cup diced cooked ham warmed
  • ½ cup bacon pieces I cheat and buy the bagged kind :)
  • ½ cup fresh green onions chopped

For the Cheesy Broccoli Sauce

  • ¼ cup butter
  • ¼ cup all-purpose flour
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 ¾ cups milk
  • 1 cup shredded cheddar cheese
  • 1 cup steamed broccoli cut into tiny pieces

Instructions

For the Potatoes

  • Microwave potatoes as directed on package.
  • Transfer to large bowl, add butter, heavy cream, sour cream, cheese, salt and pepper.
  • Mash until ingredients are well combined.
  • Divide mashed potatoes between bowls.
  • Top with grated cheese, steamed broccoli, ham, bacon pieces and green onions.
  • Drizzle with cheesy broccoli  sauce.

For the Cheesy Broccoli Sauce

  • In a saucepan over medium heat, melt butter.
  • Stir in flour, salt and pepper until smooth.
  • Add milk gradually and bring to a boil.
  • Stir constantly for 2 minutes or until thickened.
  • Add the cheese and stir until melted.
  • Add the cooked broccoli pieces.
