Easy Sweet Potato Casserole
An easy and delicious casserole that comes together with no scrubbing, boiling or baking the sweet potatoes! Topped with a sweet, salty and crunchy streusel, your guests will devour this simple and tasty side dish!

Ingredients
40 ounce canned yams in syrup
drained and mashed
¼
cup
sugar

large egg
¼
cup
butter
melted
½
teaspoon
ground cinnamon
Dash salt
For Topping
1
cup
coarsely crushed
Ritz crackers
about 25 crackers
½
cup
chopped pecans
¼
cup
packed brown sugar
¼
cup
butter
melted
Instructions
Preheat oven to 350° Fahrenheit.
In a large bowl, combine yams, sugar, egg, butter, ground cinnamon and salt.
Transfer to a greased
1.5 quart baking dish
.
Combine topping ingredients.
Sprinkle over sweet potato mixture.
Bake uncovered for 20-25 minutes or until potatoes are heated through and topping is golden brown.
