Easy Sweet Potato Casserole
An easy and delicious casserole that comes together with no scrubbing, boiling or baking the sweet potatoes! Topped with a sweet, salty and crunchy streusel, your guests will devour this simple and tasty side dish!
Ingredients
- 40 ounce canned yams in syrup drained and mashed
- ¼ cup sugar
- 1 large egg
- ¼ cup butter melted
- ½ teaspoon ground cinnamon
- Dash salt
For Topping
- 1 cup coarsely crushed Ritz crackers about 25 crackers
- ½ cup chopped pecans
- ¼ cup packed brown sugar
- ¼ cup butter melted
Instructions
- Preheat oven to 350° Fahrenheit.
- In a large bowl, combine yams, sugar, egg, butter, ground cinnamon and salt.
- Transfer to a greased 1.5 quart baking dish.
- Combine topping ingredients.
- Sprinkle over sweet potato mixture.
- Bake uncovered for 20-25 minutes or until potatoes are heated through and topping is golden brown.
