Easy Cranberry Cake

An easy and delicious cake bursting with tart cranberries. Top with vanilla ice cream and enjoy!

Ingredients

  • 1 cup flour
  • 1 cup white sugar
  • ¼ teaspoon salt
  • ½ cup chopped almonds
  • 1 cup fresh cranberries divided
  • ½ cup butter melted
  • 2 eggs beaten
  • ¼ teaspoon almond extract
  • ¾ teaspoon vanilla extract
  • ½ teaspoon cinnamon

Instructions

  • Preheat oven to 350º Fahrenheit.
  • Grease an 8x8 inch pan.
  • In large mixing bowl, combine the flour, sugar and almonds.
  • Stir in half of the cranberries and toss to coat. Set aside.
  • In another bowl, mix the butter, eggs, almond and vanilla extracts and cinnamon.
  • Add the wet mixture to the dry mixture.
  • Spread the batter into a greased 8x8 baking pan.
  • Sprinkle with remaining cranberries (pushing berries halfway into the batter).
  • Bake at 350º Fahrenheit for 40 minutes, or until a wooden pick inserted near the center comes out clean.
  • Serve warm with ice cream or whipped topping.
