Air Fryer Zucchini Fries

Thinly sliced Panko-crusted zucchini air fried until golden and crispy. Low in carbs and so much healthier than French fries!

Ingredients

  • 2 medium zucchini
  • 2 eggs beaten
  • ½ cup Panko bread crumbs
  • ¼ cup grated Parmesan cheese
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ teaspoon paprika
  • ¼ teaspoon garlic powder
  • ¼ teaspoon Italian seasoning

Instructions

  • Prepare your air fryer basket by spraying it with olive oil.
  • Cut ends off of zucchini and cut them in half. Slice them into thin sticks about 3-4 inches long and  ½ inch thick.
  • In a small bowl, combine bread crumbs, Parmesan cheese, salt, pepper, paprika, garlic powder and Italian seasoning.
  • Beat eggs in a separate small bowl.
  • Dip the wedges into the beaten egg and then coat them with the bread crumb mixture.
  • Place breaded wedges in greased air fryer basket.
  • Air fry at 350º Fahrenheit for 8-10 minutes or until fries are golden brown.
  • Enjoy immediately.

Notes

  • To bake these zucchini fries in the oven instead of an air fryer, simply place on a parchment-lined baking sheet and bake for 25-30 minutes at 425º Fahrenheit or until the zucchini fries are golden and crispy.
  • Avoid peeling zucchini when slicing it to prevent it from becoming mushy when cooked.
  • When selecting your zucchinis, choose small to medium-sized ones.
  • If your panko isn't sticking to your zucchini, try coating your fries with flour before dipping them into the egg mixture.
