Hamburger and Potato Casserole

A nostalgic and hearty Midwestern casserole featuring ground beef and green beans, surrounded by cheesy mashed potatoes and crunchy French fried onions.

Ingredients

  • 1 pound ground beef
  • 12 ounces frozen green beans cooked and drained
  • 1 can tomato soup
  • ¼ cup water
  • ½ teaspoon salt
  • teaspoon pepper
  • 2 cups prepared mashed potatoes
  • 2.8 oz French fried onions divided
  • ½ cup cheddar cheese shredded

Instructions

  • Preheat oven to 350º Fahrenheit.
  • Brown ground beef in a medium skillet over medium heat until no pink remains. This will take about 8 minutes. Drain off excess grease.
  • In a large mixing bowl, combine beef, beans, tomato soup, water, salt, and pepper.
  • Transfer mixture into a greased 1 ½ quart baking dish.
  • In a separate bowl, stir mashed potatoes and half of the French fried onions together.
  • Spoon potato mixture in a mounded ring around the outside of the baking dish on top of the beef/bean mixture.
  • Bake uncovered for 25 minutes.
  • Remove from oven and sprinkle cheese and remaining French fried onions on top of potatoes.
  • Bake for an additional 5-10 minutes, watching the onions carefully so they do not burn.

Notes

  • This recipe is great for leftovers! Just top your casserole dish with aluminum foil and keep in the fridge for up to three days. 
  • Make sure to watch the fried onions so that they don’t burn! 
  • You can substitute the ground beef with ground turkey, chicken or pork.
