Hamburger and Potato Casserole
A nostalgic and hearty Midwestern casserole featuring ground beef and green beans, surrounded by cheesy mashed potatoes and crunchy French fried onions.

1 pound ground beef 12 ounces frozen green beans cooked and drained 1 can tomato soup ¼ cup water ½ teaspoon salt ⅛ teaspoon pepper 2 cups prepared mashed potatoes 2.8 oz French fried onions divided ½ cup cheddar cheese shredded
Preheat oven to 350º Fahrenheit.
Brown ground beef in a medium skillet over medium heat until no pink remains. This will take about 8 minutes. Drain off excess grease.
In a large mixing bowl, combine beef, beans, tomato soup, water, salt, and pepper.
Transfer mixture into a greased 1 ½ quart baking dish.
In a separate bowl, stir mashed potatoes and half of the French fried onions together.
Spoon potato mixture in a mounded ring around the outside of the baking dish on top of the beef/bean mixture.
Bake uncovered for 25 minutes.
Remove from oven and sprinkle cheese and remaining French fried onions on top of potatoes.
Bake for an additional 5-10 minutes, watching the onions carefully so they do not burn.
This recipe is great for leftovers! Just top your casserole dish with aluminum foil and keep in the fridge for up to three days.
Make sure to watch the fried onions so that they don’t burn!
You can substitute the ground beef with ground turkey, chicken or pork.
