Chinese-Inspired Easy Fried Rice Recipe

This recipe uses Minute Rice and a combination of veggies, scrambled eggs, seasonings and soy sauce to make the most flavorful fried rice. Our family's favorite recipe!

Ingredients

For the Rice:

  • 3 cups Minute Rice
  • 3 cups water
  • ½ teaspoon salt

For the Eggs:

  • 3 eggs
  • 1 ½ tablespoons water
  • 1 ½ tablespoons butter
  • Pinch of salt

For the Vegetables:

  • 1 tablespoon butter
  • ¾ cup chopped onion
  • 1 cup frozen peas and carrots
  • 1 teaspoon garlic powder
  • 1 teaspoon pepper
  • 7 tablespoons soy sauce
  • 2 teaspoons sesame oil

Instructions

  • Prepare the Minute Rice as instructed on the box. Set aside.
  • In a small bowl, whisk the eggs and the water together.
  • Heat the butter in the skillet and add the eggs.
  • Scramble over low heat until completely cooked. Set aside.
  • Heat butter in a large fry pan until melted.
  • Add onion, carrots and peas. Cook for 2 minutes making sure not to overcook or burn the vegetables.
  • Stir in the garlic powder and pepper.
  • Add the rice and soy sauce. Continue stirring and sauté for 2 minutes.
  • Fold in the eggs and cook for an additional minute.
  • Remove from the heat and stir in the sesame oil.

Notes

  • You can add in protein, like chicken or pork. 
  • Use day leftover rice for best results.
  • Store leftovers in the fridge for up to 3-5 days.
