Chinese-Inspired Easy Fried Rice Recipe
This recipe uses Minute Rice and a combination of veggies, scrambled eggs, seasonings and soy sauce to make the most flavorful fried rice. Our family's favorite recipe!

For the Rice: 3 cups Minute Rice 3 cups water ½ teaspoon salt For the Eggs: 3 eggs 1 ½ tablespoons water 1 ½ tablespoons butter Pinch of salt For the Vegetables: 1 tablespoon butter ¾ cup chopped onion 1 cup frozen peas and carrots 1 teaspoon garlic powder 1 teaspoon pepper 7 tablespoons soy sauce 2 teaspoons sesame oil
Prepare the Minute Rice as instructed on the box. Set aside.
In a small bowl, whisk the eggs and the water together.
Heat the butter in the skillet and add the eggs.
Scramble over low heat until completely cooked. Set aside.
Heat butter in a large fry pan until melted.
Add onion, carrots and peas. Cook for 2 minutes making sure not to overcook or burn the vegetables.
Stir in the garlic powder and pepper.
Add the rice and soy sauce. Continue stirring and sauté for 2 minutes.
Fold in the eggs and cook for an additional minute.
Remove from the heat and stir in the sesame oil.
You can add in protein, like chicken or pork.
Use day leftover rice for best results.
Store leftovers in the fridge for up to 3-5 days.
