    Easy Fried Rice

    Easy Fried Rice - This recipe uses Minute Rice and a combination of veggies, scrambled eggs, seasonings and soy sauce to make the most flavorful fried rice. Our family's favorite recipe!

    In my opinion, homemade fried rice is so much better than takeout. Usually, fried rice is made with rice, veggies, scant amounts of meat, and seasoned with salt, pepper, and a little soy sauce.

    This particular recipe doesn't include any meat, but once you’ve got the base of the rice down, you can easily customize it with additional mix-ins or proteins like chicken or pork.

    HOW TO MAKE EASY FRIED RICE

    To make this simple and delicious fried rice, you'll need:

    • Minute Rice
    • Water
    • Salt
    • Eggs
    • Butter
    • Onion
    • Peas & carrots
    • Garlic pepper
    • Pepper
    • Soy sauce 
    • Sesame oil
    steps to make fried rice
    1. Prepare the Minute Rice as instructed on the box. Set aside.
    2. In a small bowl, whisk the eggs and the water together.
    3. Heat the butter in the skillet and add the eggs. Scramble over low heat until completely cooked. Set aside.
    4. Heat butter in a large fry pan until melted. Add onion, carrots and peas. Cook for 2 minutes making sure not to overcook or burn the vegetables.

    FINAL STEPS FOR PREPARING FRIED RICE

    After the vegetables are cooked, add the soy sauce and rice to your veggies, stirring everything together. Sauté everything for an additional 2 minutes.

    Fold in the eggs and cook for another minute, then remove the rice from the heat and stir in the sesame oil for flavor.

    CAN I MAKE FRIED RICE AHEAD OF TIME?

    Yes, you can prep many of the ingredients ahead of time. I normally prepare the rice and eggs and refrigerate them until I'm ready to combine everything together.

    Preparing the rice and eggs ahead of time can shave about 10 minutes off of the total cook time.

    HOW TO STORE EASY FRIED RICE

    If you have leftover rice, you can store it in an airtight container in your refrigerator and it will keep for 3-5 days. 

    You can reheat any leftovers in the microwave or reheat the rice in a skillet with a drizzle of sesame oil until hot.

    Ingredients

    For the Rice:

    • 3 cups Minute Rice
    • 3 cups water
    • ½ teaspoon salt

    For the Eggs:

    • 3 eggs
    • 1 ½ tablespoons water
    • 1 ½ tablespoons butter
    • Pinch of salt

    For the Vegetables:

    • 1 tablespoon butter
    • ¾ cup chopped onion
    • 1 cup frozen peas and carrots
    • 1 teaspoon garlic powder
    • 1 teaspoon pepper
    • 7 tablespoons soy sauce
    • 2 teaspoons sesame oil

    Instructions

    • Prepare the Minute Rice as instructed on the box. Set aside.
    • In a small bowl, whisk the eggs and the water together.
    • Heat the butter in the skillet and add the eggs.
    • Scramble over low heat until completely cooked. Set aside.
    • Heat butter in a large fry pan until melted.
    • Add onion, carrots and peas. Cook for 2 minutes making sure not to overcook or burn the vegetables.
    • Stir in the garlic powder and pepper.
    • Add the rice and soy sauce. Continue stirring and sauté for 2 minutes.
    • Fold in the eggs and cook for an additional minute.
    • Remove from the heat and stir in the sesame oil.

    Notes

    • You can add in protein, like chicken or pork. 
    • Use day leftover rice for best results.
    • Store leftovers in the fridge for up to 3-5 days.
