Krispy Confetti Eggs

These Krispy Confetti Eggs are ooey, gooey and oh so yummy! What’s the best part about these eggs? The surprise INSIDE, of course!

Ingredients

  • 12 plastic Easter eggs
  • 10 oz. mini marshmallows
  • 6 cups Rice Krispies
  • Small chocolate or malted milk eggs
  • Confetti sprinkles
  • 4 tablespoons butter

Instructions

  • Wash and dry the plastic eggs. Spray with nonstick cooking spray and set aside.
  • Melt butter and marshmallows in the microwave in a bowl or in a saucepan over low heat.
  • Add the Rice Krispies, shake in some sprinkles and stir together.
  • Spoon some of the krispy mixture into one side of the plastic egg and place a chocolate or malted milk egg in the middle of the mixture. Fill the other side of the egg with the mixture and close the egg.
  • Let the egg set for 5-8 minutes and then gently release the egg from the mold.
  • Shake a few more sprinkles on and allow to cool completely before storing in a covered container or Ziploc bag.

Notes

  • Ensure Proper Coating: Make sure to thoroughly coat the plastic eggs with nonstick cooking spray to prevent the Krispy mixture from sticking to the molds. This will help in easily releasing the eggs once they're set.
  • Be Mindful of Temperature: When melting the butter and marshmallows, be cautious not to overheat them, as this can result in a tough and chewy texture. Whether using a microwave or stovetop, heat them gradually and stir frequently for a smooth consistency.
  • Allow Sufficient Setting Time: It's essential to let the filled eggs set for an adequate amount of time (5-8 minutes) before attempting to release them from the molds. This allows the Krispy mixture to firm up and hold its shape, ensuring the eggs maintain their structure when removed from the molds.
