Pina Colada Fluff
Sweet crushed pineapple, fluffy whipped topping, smooth vanilla pudding, mini marshmallows, and chopped pecans come together to make the perfect summertime dessert.

3.4 oz box instant vanilla pudding 1 cup Cream of Coconut 8 ounces whipped topping 20 ounce can crushed pineapple with juice 2 cups mini marshmallows 1 ½ cup sweetened shredded coconut ½ cup chopped pecans Maraschino cherries
In a large mixing bowl, whisk pudding mix and cream of coconut together until smooth.
Stir in whipped topping.
Stir in can of crushed pineapple. Be sure to include the juice.
Add marshmallows and shredded coconut. Stir until mixed well.
Chill for at least 1 hour.
Garnish with pecans and cherries and serve.
Add rum extract or vanilla extract for a bit of a different flavor.
For an extra crunch, add in pretzels.
If pecans aren’t your favorite, add in chopped walnuts or peanuts.
This recipe can be made a few days in advance, it actually gets better with time!
