Pina Colada Fluff

Sweet crushed pineapple, fluffy whipped topping, smooth vanilla pudding, mini marshmallows, and chopped pecans come together to make the perfect summertime dessert.

Ingredients

  • 3.4 oz box instant vanilla pudding
  • 1 cup Cream of Coconut
  • 8 ounces whipped topping
  • 20 ounce can crushed pineapple with juice
  • 2 cups mini marshmallows
  • 1 ½ cup sweetened shredded coconut
  • ½ cup chopped pecans
  • Maraschino cherries

Instructions

  • In a large mixing bowl, whisk pudding mix and cream of coconut together until smooth.
  • Stir in whipped topping.
  • Stir in can of crushed pineapple.  Be sure to include the juice.
  • Add marshmallows and shredded coconut.  Stir until mixed well.
  • Chill for at least 1 hour.
  • Garnish with pecans and cherries and serve.

Notes

  • Add rum extract or vanilla extract for a bit of a different flavor. 
  • For an extra crunch, add in pretzels. 
  • If pecans aren’t your favorite, add in chopped walnuts or peanuts. 
  • This recipe can be made a few days in advance, it actually gets better with time!
