Zucchini Patties Recipe

These savory zucchini patties are a delightful way to transform your garden-fresh zucchini into a flavorful and cheesy delight!

Ingredients

  • 2 medium zucchinis
  • 2 eggs
  • ½ cup instant potato flakes
  • ½ cup grated Parmesan cheese
  • ½ cup shredded mozzarella cheese
  • ¼ cup chopped onion
  • salt to taste
  • 2 tablespoons vegetable oil

Instructions

  • Slice zucchinis lengthwise and using a spoon, scoop seeds out.  
  • Grate zucchinis.
  • Place grated zucchini, eggs, potato flakes, Parmesan cheese, mozzarella cheese, onion, and salt in a medium bowl.  Stir until well-combined
  • In a large skillet over medium heat, heat oil.
  • Form 8 patties that are about ¾-inch thick. 
  • Place patties in hot oil and cook 2-3 minutes on each side until they are golden brown. 
  • Transfer the patties to a plate covered with paper toweling to drain the oil off.

Notes

  • Smaller or medium sized zucchini are usually less watery and have more flavor. 
  • One of the easiest ways to shred your zucchini is with a food processor or a cheese grater. 
  • Make sure your patties are crisp by squeezing the grated zucchini with a clean kitchen towel before adding it into your recipe.
