Ingredients

  • 12 ounce bag frozen broccoli florets thawed
  • 2 cups Colby Jack shredded cheese
  • 4 ounces Velveeta cheese sauce
  • ¼ teaspoon crushed red pepper flakes
  • ½ cup butter melted
  • 2 eggs divided
  • 1 ½ cups panko crumbs
  • ¼ cup flour

Instructions

  • Chop broccoli florets into ¼-inch pieces.  Drain any water off if needed.  Place in a large bowl.
  • Add shredded cheese, cheese sauce, red pepper flakes, butter, 1 egg, and ½ cup panko crumbs to broccoli. Mix well.
  • Using a scoop, form 2 inch balls and place them on a plate.  Refrigerate for 30 minutes.
  • Put flour, remaining egg (lightly beaten), and remaining panko crumbs in three separate bowls.
  • Roll ball in flour, then cover it in beaten egg, and finally, coat it in panko crumbs.
  • Place prepared balls on a plate and refrigerate again for 30 minutes.
  • Place balls into your greased air fryer basket and air fry at 390ºF for 10 minutes or until lightly browned.

Notes

  • Grate your own cheese for the best flavor and texture.
  • Cut the broccoli small enough, about ¼ inch pieces.
  • To keep the balls from falling apart, use a silicone spatula to lift them.
