Ingredients

  • 16 ounces medium fresh mushrooms
  • 1 cup white vinegar
  • ½ cup sugar
  • 1 ½ tablespoons garlic salt
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Tabasco sauce

Instructions

  • Bring a large pot of water to boil.
  • Add mushrooms to boiling water for 1 minute.
  • Drain off boiling water and rinse with cold water.
  • Place blanched mushrooms in a large sealable jar.
  • In a medium saucepan, combine vinegar, sugar, garlic salt, Worcestershire sauce, and Tabasco sauce.  Bring to a boil, stirring often.
  • Reduce heat and simmer until sugar is dissolved.
  • Pour mixture over mushrooms.  Allow to cool.
  • Cover and refrigerate for at least 24 hours before serving.

Notes

  • You can either use 2 two pint mason jars or a quart jar for the mushrooms.
  • 24-hour marinating time not calculated within total recipe time. The longer the mushrooms marinate, the better - make sure it's at least 24 hours.
  • Small or medium mushrooms are preferred because they soak up the flavors easiest!
