Cilantro Lime Chicken Skewers

Tender pieces of chicken breast marinated in cilantro, lime juice and garlic - then skewered and grilled to perfection.

Ingredients

  • 4 boneless chicken breasts
  • 2 tablespoons cilantro
  • 1 lime juiced
  • ¾ cup olive oil
  • 1 tablespoon minced garlic
  • 2 teaspoons honey
  • 1 teaspoon red pepper flakes
  • Salt & pepper to taste

Instructions

  • Cut up the chicken breasts into bite-size pieces.
  • Season them with salt and pepper, to taste.
  • In a bowl, combine the olive oil, garlic, lime juice, honey and red pepper flakes.
  • Pour mixture into a ziploc bag and add in the chicken pieces.
  • Refrigerate for 30 minutes to an hour.
  • Place the marinated chicken pieces onto skewers and grill over medium heat, turning skewers once until the chicken is no longer pink in the center - about 5 minutes per side

  1. Marinate for Optimal Flavor: Marinating the chicken pieces in the cilantro lime marinade adds depth of flavor and ensures juicy, tender meat. Allow the chicken to marinate in the refrigerator for at least 30 minutes to an hour before grilling. This gives the flavors time to infuse into the chicken, resulting in a more flavorful and delicious dish.
  2. Soak Skewers Before Grilling: If you're using wooden skewers, soak them in water for at least 30 minutes before threading the chicken onto them. This prevents the skewers from burning during grilling and helps keep the chicken secure while cooking. Soaking the skewers also prevents them from splintering and breaking, ensuring a hassle-free grilling experience.
  3. Grill with Even Heat: When grilling the chicken skewers, ensure that the grill is preheated to medium heat. This ensures even cooking and prevents the chicken from drying out or burning on the outside while still being raw in the center. Grill the skewers for about 5 minutes per side, turning them once halfway through, until the chicken is cooked through and no longer pink in the center. Use a meat thermometer to ensure the internal temperature of the chicken reaches at least 165°F (74°C) for safe consumption.
