Ingredients

  • For the Muffins
  • 1 ½ cups flour
  • 1 cup white sugar
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • cup vegetable oil
  • ½ teaspoon salt
  • cup milk
  • 1 egg
  • 1 cup fresh blueberries or fruit of choice
  • Crumble Topping
  • cup brown sugar
  • ¼ cup flour
  • 1 teaspoon cinnamon
  • 2 tablespoons butter softened

Instructions

  • Preheat oven to 400 degrees Fahrenheit.
  • Place liners inside the cups of your muffin pan and spray with nonstick spray.
  • Combine 1 ½ cups flour, 1 cup sugar, baking powder and salt.
  • Add in ⅓ cup vegetable oil, egg and ⅓ cup milk.
  • Fold in the blueberries and vanilla and fill the muffin cups.
  • Sprinkle the muffins with the crumb mixture.
  • Bake for 20 minutes or until done

Crumble Topping

  • Mix together brown sugar, flour, butter, and cinnamon. Mix with fork, and sprinkle over muffins halfway through baking.

Notes

  1. Avoid Overmixing: When making the muffin batter, avoid overmixing the ingredients once the wet and dry ingredients are combined. Overmixing can result in tough and dense muffins. Instead, gently fold the wet and dry ingredients together until just combined. A few lumps in the batter are perfectly fine and will ensure tender and moist muffins.
  2. Use Fresh Blueberries: Fresh blueberries add a burst of flavor and juiciness to the muffins. Ensure you use ripe, fresh blueberries for the best results. If fresh blueberries are not available, you can use frozen blueberries, but do not thaw them before adding them to the batter. Frozen blueberries may bleed more into the batter, resulting in slightly purple-hued muffins, but they will still be delicious.
  3. Properly Prepare Crumble Topping: Ensure the crumble topping is properly mixed and evenly distributed over the muffins before baking. Use a fork to combine the brown sugar, flour, butter, and cinnamon until the mixture resembles coarse crumbs. Sprinkle the crumble topping generously over each muffin before baking to add a sweet and crunchy texture. If desired, gently press the crumble topping into the muffin batter to help it adhere during baking.
