Instructions
In a medium-size saucepan, bring about 2 cups of water to a boil and add carrots.
Turn heat down to medium-low and allow to cook for 15-20 minutes or until tender. Drain and set aside.
In a large stockpot, add the vegetable broth, V8, diced potatoes, diced tomatoes, green beans, corn, pasta, carrots and Old Bay seasoning.
Bring the soup to a boil and then allow to simmer for 30-40 minutes.
Notes
Customize Veggies: Don't hesitate to swap or add veggies based on preference or availability. Bell peppers, celery, or peas can be great additions to this soup, adding both flavor and nutrition. Experiment with different combinations to suit your taste.
Cook Pasta Separately: To prevent the pasta from becoming mushy and absorbing too much liquid, cook it separately according to package instructions. Then, add the cooked pasta to the soup just before serving. This ensures that the pasta retains its texture and doesn't overpower the soup.
