Chocolate Fudge Mint Oreo Bars

Ingredients

For the Oreo crust

  • 1 stick unsalted butter melted
  • 48 Oreos crushed

For the bars

  • 1.5 quarts mint chocolate chip ice cream softened
  • 15.5 ounces hot fudge ice cream topping
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • ¼ cup powdered sugar
  • 6 mint Oreos crushed

Instructions

For the Oreo crust

  • Line a 9x13 inch pan with aluminum foil or parchment paper and spray with non-stick cooking spray.
  • In a bowl combine the melted butter and the crushed Oreos.
  • Once combined, press the Oreo mixture into the greased pan to form the crust.

For the bars

  • Scoop the softened ice cream out on top of the Oreo crust layer and spread evenly.
  • Heat the hot fudge in the microwave as directed on the container and swirl into the softened ice cream.
  • Place the pan into the freezer to freeze.
  • After this layer is frozen, using a hand mixer, combine the heavy cream, powdered sugar and vanilla extract. Beat until stiff peaks form.
  • Spread this over the top of the ice cream and fudge layer.
  • Sprinkle with the crushed Oreos.
  • Return pan to freezer until ready to serve.

  1. Even Crust Distribution: When pressing the Oreo crust into the pan, ensure that it is spread evenly and pressed firmly to form a solid base for the bars. Using the bottom of a flat measuring cup or the back of a spoon can help compact the crust evenly. This ensures that each bite of the bars has a consistent crust layer, providing a satisfying texture and flavor.
  2. Layering Technique: When layering the ingredients, make sure each layer is well distributed and spread evenly. After spreading the softened ice cream over the Oreo crust, drizzle the hot fudge evenly over the ice cream and use a knife or spatula to swirl it in. This ensures that every bite of the bars has a delicious blend of ice cream and fudge flavors.
  3. Freezing Time: Allow each layer to freeze properly before adding the next one to ensure the bars set correctly and maintain their shape when sliced. After adding the heavy cream mixture over the fudge layer, sprinkle the crushed Oreos evenly on top and return the pan to the freezer until completely frozen. This helps the layers hold together and prevents them from becoming too soft or melting when served.
