Prepare a 9x13-inch baking dish by spraying it with cooking spray.
In a large bowl, combine sugar cookie mix, oats, ¼ cup brown sugar, and 1 teaspoon of the cinnamon. Pour in melted butter and mix well. Set aside.
In a small mixing bowl, beat cream cheese, sugar, and vanilla until smooth and creamy. Set aside.
In a large mixing bowl, put apples, ¼ cup brown sugar, and 1 teaspoon cinnamon. Toss until apples are evenly coated.
Evenly spread apples in the bottom of your prepared baking dish.
Place spoonfuls of cream cheese mixture over top of apples.
Evenly sprinkle cookie mixture over top of the cream cheese mixture.
Bake 35-40 minutes or until the topping is golden brown and the apples are cooked through.
Drizzle caramel topping on top and serve.
Serve with ice cream.
Notes
Skip the peeling: Save some prep time by picking up some pre-peeled apples. Most grocery stores carry them, and they work great in this recipe!
Use crisp apples: Avoid using softer apples like McIntosh or Fuji for this recipe and try to use crisp, firm apples like Gala or Granny Smith instead. These will hold up better during baking.
Sugar cookie mix swap: You can make your own homemade sugar cookie mix, or switch up the crumble completely and use graham cracker crumbs or crushed vanilla wafers with melted butter instead.
Don’t overmix the crumble: Stir the topping just until combined — overmixing can make it dense instead of crumbly and crisp.
Cool slightly before serving: Let the dessert rest for 10–15 minutes after baking to help it set and make slicing easier.
Make it ahead: Assemble the layers and refrigerate up to 24 hours before baking. Just add a few extra minutes to the bake time if chilled.
Reheat leftovers: Warm slices in the oven at 325°F for 10 minutes to bring back that freshly baked texture (and melt the caramel again!).
Top just before serving: Wait to drizzle caramel until right before serving so it stays glossy and doesn’t soak into the topping.
