  • ¼ cup and 2 tablespoons baking cocoa divided
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup milk
  • 2 tablespoons vegetable oil
  • 1 teaspoon vanilla
  • ¾ cup chocolate chips
  • ¾ cup brown sugar packed
  • 1 ½ cups warm water
  • Vanilla ice cream for topping

Instructions

  • Spray the inside of your crock pot with nonstick cooking spray.
  • Mix flour, sugar, 2 tablespoons baking cocoa, baking powder and salt in a mixing bowl.
  • Add the milk, oil and vanilla until well-combined.
  • Spread the batter in the crock pot.
  • Sprinkle the chocolate chips on top of the batter.
  • In another bowl, mix the brown sugar and remaining ¼ cup cocoa.
  • Stir in the warm water until smooth and pour slowly and gently over the chocolate chips.
  • Cook on high for 2 hours.
  • Turn off, unplug and remove the lid from the crock pot.
  • Allow the cake to stand uncovered for 30 minutes.
  • Spoon warm cake into cups, spoon sauce from the bottom of the crock pot over the cake and top with a scoop of vanilla ice cream.

Notes

  1. Ensure Even Cooking: To ensure even cooking and prevent burning, it's important to spread the batter evenly in the crock pot. Use a spatula to smooth out the batter and distribute it evenly across the bottom of the crock pot. This helps the cake cook uniformly and prevents any dry or overcooked spots.
  2. Be Mindful of Moisture Levels: The sauce for the lava cake is created by mixing warm water with brown sugar and cocoa powder. It's essential to pour this mixture slowly and gently over the chocolate chips to avoid disturbing the batter and creating uneven layers. Pouring the mixture slowly ensures that it evenly distributes over the chocolate chips and creates a deliciously gooey sauce.
  3. Allow for Resting Time: After the cooking time is complete, it's crucial to allow the cake to stand uncovered in the crock pot for 30 minutes before serving. This resting time allows the cake to set slightly and allows excess moisture to evaporate, resulting in a firmer texture and better presentation when serving. Additionally, spooning warm cake into cups ensures that the lava cake maintains its gooey, molten center when served with vanilla ice cream on top.
