Ninja Foodi Cheesy Cauliflower Soup
A rich, creamy and delicious soup loaded with cauliflower and grated cheese made right in the Ninja Foodi pressure cooker.

- 2.5 pounds cauliflower florets about 2 heads
- 8 cloves fresh garlic minced
- ½ yellow onion chopped
- 2 cups chicken broth
- ½ teaspoon salt
- 1 teaspoon pepper
- 8 ounces cream cheese softened
- 4 ounces sharp cheddar cheese grated
Place cauliflower florets, garlic, onions, chicken broth, salt, and pepper in the Foodi cooking pot.
Cook on HIGH PRESSURE for 8 minutes. Quick release.
Add cream cheese and shredded cheese.
Using a potato masher, mix everything together until cheese is melted.
Serve immediately.
- The more you mash your cauliflower, the smoother the consistency. I like to leave in some chunks for texture.
- If your soup is too thin, add in a bit of a slurry.
- Store this recipe in an airtight container for up to four days in the fridge.
- This is a great freezer meal! It will keep in the freezer for up to three months.
