1 tablespoon olive oil ½ cup diced onion 1 jalapeno seeded and diced ½ teaspoon cumin ½ teaspoon chili powder ½ teaspoon garlic powder ½ teaspoon paprika ½ teaspoon salt ¼ teaspoon black pepper 10 ounce can diced tomatoes with green chilies drained 15 ounce can chili no beans 32 ounces Velveeta cheese cut into cubes Tortilla chips for dipping
In a large skillet, heat olive oil over medium heat.
Add onions and jalapenos. Cook for about 3-5 minutes until onions are translucent.
Add cumin, chili powder, garlic powder, paprika, salt, and pepper. Stir well.
Add diced tomatoes and chili. Stir well.
Add cubed Velveeta. Continue cooking on low and tiring often until cheese melts.
Top with chopped onions, jalapenos, and tomatoes.
Serve with tortilla chips.
Cut the Velveeta into smaller chunks, it helps the cheese melt quicker.
Store leftover queso for 4-5 days in an airtight container in the fridge.
