Slice sweet potato into long strips about ¼" thick.
For smaller pieces, slice each of the long strips in half (optional).
Toss sweet potato slices with olive oil.
Lay sweet potato slices evenly onto a lined baking pan.
Sprinkle with cinnamon.
Bake for 2 ½ - 3 hours.
Allow to cool and store in a ziplock bag or airtight container in the fridge.
Treats will keep 2-3 weeks in the fridge and up to 4 months in the freezer.
Notes
Uniform Slicing: Aim for uniform thickness when slicing the sweet potato strips. This ensures even baking and consistent texture throughout the treats. If you have a mandoline slicer, it can be helpful in achieving uniform slices quickly and efficiently.
Adjust Baking Time: Keep an eye on the treats while they're baking, especially towards the end of the baking time. Depending on the thickness of the sweet potato slices and your oven's temperature accuracy, the treats may require slightly more or less time to achieve the desired chewy texture. Adjust the baking time accordingly to avoid undercooking or overcooking.
Storage and Freshness: To prolong the shelf life of the treats, store them properly in either the fridge or freezer. While they can last up to 2–3 weeks in the fridge, storing them in the freezer can extend their freshness for up to 4 months.
