Ninja Foodi Cheesy Cauliflower Soup
A rich, creamy and delicious soup loaded with cauliflower and grated cheese made right in the Ninja Foodi pressure cooker.

Ingredients

cauliflower florets
about 2 heads

cloves
fresh garlic
minced

yellow onion
chopped

chicken broth

teaspoon
salt

teaspoon
pepper

cream cheese
softened

ounces
sharp cheddar cheese
grated
Instructions
Place cauliflower florets, garlic, onions, chicken broth, salt, and pepper in the Foodi cooking pot.
Cook on HIGH PRESSURE for 8 minutes. Quick release.
Add cream cheese and shredded cheese.
Using a potato masher, mix everything together until cheese is melted.
Serve immediately.
Notes
The more you mash your cauliflower, the smoother the consistency. I like to leave in some chunks for texture.
If your soup is too thin, add in a bit of a slurry.
Store this recipe in an airtight container for up to four days in the fridge.
This is a great freezer meal! It will keep in the freezer for up to three months.
