Place eggs in a large pot of water over high heat. Bring to a boil for 12 minutes. Remove from burner and carefully drain water from eggs.
Place eggs in an ice water bath for 10 minutes. Drain water again.
Using a spoon, gently crack the egg shells all the way around each egg. Be careful on the ends, making sure not to create a large hole. Do not remove the shells.
In a large bowl, mix water and purple gel food coloring. Place cracked eggs in the water and refrigerate for 1 hour.
Drain water and carefully peel eggs.
Cut the eggs lengthwise and remove the yolk. Put the yolks in a medium mixing bowl and place the egg whites on a serving tray and set aside.
Using a fork, smash the yolks.
Add Miracle Whip, mustard, salt, pepper, and neon green food coloring to yolk filling. Mix until smooth.
Transfer yolk mixture to a large ziplock bag. Cut a small corner off and pipe the mixture into each egg white.
Garnish with poppy seeds and serve.
Notes
The longer that you soak your eggs in the water, the darker the color of the dyed cracks will be.
Be careful not to spill your bowl of water and food dye, because it will stain.
It’s important to have perfectly hard-boiled eggs that are cooked all the way through and have shells that peel perfectly.
You can boil, steam, or use an electric egg steamer for your hard-boiled eggs. Whatever works best for you!
