I hope everyone had a wonderful Easter. I know we did. The weather was nice enough for the kids to spend some quality time outside, which was great! Today I'm sharing fresh and easy appetizers that only take minutes to put together, but look and taste like you spent a couple hours carefully assembling them all!
Here's what you'll need:
- French baguette (fresh or toasted, if you prefer)
- Dill weed
- Cucumber
- Fresh baby dill
- Philadelphia cream cheese (try the Garden Vegetable or Garlic Herb flavored)
Start by washing and peeling the cucumber. I leave some strips of green around the cucumber so when you slice it, it has a cool pattern to it (another trick I learned from Pinterest).
See what I mean. I could probably just stop here and eat this bowl full of slices myself.
Slice up the baguette and spread some of the cream cheese on the top half. Don't skimp on the cream cheese. This is what gives the appetizer a burst of flavor. Sprinkle on some of the dill weed, put on a cucumber slice and place a sprig of fresh dill on top.
I often serve these for home parties or when it's just "the ladies" hanging out. We can gobble up these babies in no time at all!
Whether you prefer the baguette fresh or toasted, these appetizers are always a hit and so simple to throw together. Experiment if you like and try a few different brands of crackers if you can't get your hands on a french baguette. You'll find yourself coming back again and again to this simple and tasty appetizer perfect for a spring or summer party!

Ingredients
- French baguette (fresh or toasted, if you prefer)
- Dill weed
- Cucumber (cleaned and thinly sliced)
- Fresh baby dill
- Philadelphia cream cheese spread (try the Garden Vegetable or Garlic Herb flavored)
Instructions
- Thinly slice the baguette.
- Spread some of the cream cheese on one side of the baguette.
- Sprinkle some dill weed on top of the cream cheese layer.
- Top with a sprig of fresh baby dill.

How far in advance can you make these?

With the baguettes, you can make them maybe an hour before or so. You don't want the bread to dry out. If you use a cracker for the base, you may be able to get away with an earlier prep.

I love these! I make my own seasoned cream cheese by mixing 8 oz of cheese with a packet of Italian dressing seasoning (or if I don't have that, I just throw in some herbs and spices that sound good). But these are a snack that should be shared with the world. Thanks for the post!

I used to think I didn't like cucumbers but lately I've really enjoyed them. It started with dipping in hummus then I put a slice on a baguette with cheese and loved it. I love your pictures and will verify that this is a delicious and simple snack. The dill not only looks great but I bet tastes amazing.
