Ingredients

  • 1 cup butter (softened)
  • 1 cup sugar
  • 2 eggs
  • 2 cups flour
  • 1 teaspoon baking soda
  • 3.4 ounce box pistachio pudding mix
  • ½ cup unsalted pistachios (crushed)
  • 1 cup white chocolate chips

Instructions

  • Preheat oven to 350ºF.
  • In a large mixing bowl, cream butter, sugar, and eggs together.
  • Add flour and baking soda. Beat again.
  • Add pistachio pudding mix and beat again.
  • Stir in crushed pistachios and white chocolate chips.
  • Using a cookie dough scoop, scoop balls of dough on a greased baking sheet about 2 inches apart.
  • Bake for 10-13 minutes are until bottoms slightly turn golden brown. Allow cookies to cool on the baking sheet before transferring to a cooling rack.

Place a slice of white break into your airtight container of cookies to keep them soft and chewy. 
You can store these cookies in the fridge for up to 4-5 days in an airtight container.
