The countdown to Memorial Day has begun, and it's been so much fun thinking about the food and drinks we'll be enjoying throughout the weekend. We'll be spending the weekend up at our lake cabin and although the water will still be too cold to swim in, there are lots of other activities we're looking forward to. Horseback riding, roasting s'mores and doing a little downtown shopping in a quaint community in Northern Wisconsin are all on the to-do list.

When I think about summer, I think about fresh fruits, fresh salads and fresh drinks. Don't you, too? So, today we're making a sweet, tangy and delicious homemade Pink Lemonade!

Ingredients

  • 1 can pink lemonade concentrate (thawed, divided)
  • 1 ½ cups water (divided)
  • 1 container (23.2 ounce frozen sweetened sliced strawberries, thawed, divided)
  • 2 cups ice cubes (divided)
  • Lemon lime soda
  • Mike and Ike's MegaMix Sours (strawberries and lemon slices for garnish)

Instructions

  • In a blender, combine ¾ cup pink lemonade concentrate, ¾ cup water, half of the strawberries and 1 cup ice cubes. 
  • Pour contents into a freezer container.
  • Repeat step 1 with the rest of the lemonade concentrate, water, strawberries and ice cubes.
  • Pour contents into the same freezer container or a separate container if you'd like to divide the batch.
  • Cover container(s) and freeze for at least 8-12 hours.
  • Let stand at room temperature for 30 minutes - 1 hour before serving.
  • Fill chilled glass ¾ full with slush. Top with lemon lime soda. 
  • Slip 4-5 Mike and Ike's MegaMix Sours onto an umbrella pick for garnish along with a fresh strawberry and lemon slice.
  • Serve immediately.

Notes

  1. Adjust Sugar to Taste: The sweetness of the pink lemonade can vary based on personal preference and the natural sweetness of the raspberries and lemons. Taste the mixture after straining and before adding the lemon juice and cold water. Adjust the amount of sugar accordingly to achieve your desired level of sweetness.
  2. Strain for Smooth Texture: Straining the raspberry mixture before adding it to the pitcher ensures a smooth and seed-free texture for your lemonade. Use a fine-mesh strainer or cheesecloth to remove any seeds and pulp, leaving behind a vibrant and clear liquid base for your drink.
  3. Chill Thoroughly: For the most refreshing experience, chill the pink lemonade thoroughly before serving. Allow it to cool to room temperature after straining, then refrigerate until well chilled. Serving the lemonade over ice enhances its crispness and ensures a refreshing sip every time.
