Summer is here {thank goodness} and life has been busier than ever! The kids are spending time at camp during the day, and when they come home, they're exhausted after hours of running, swimming and playing in the fresh air. However, even though that's the case, they expend what little energy they have left, riding their bikes and and chatting with their friends in the neighborhood at the end of the day. We've been spending much of our time outside in the evening, and that means our normal schedule gets pushed back a bit. . .including dinner.
The kids have been eating lots of quesadillas because they're absolutely crazy about them {and they're super easy for Mom :)} and Josh and I have been throwing chicken breasts on grill at least once a week. Today I'm sharing a recipe for Chicken Garlic Ranch Tortilla Pizza. I love making these little pizzas. I call them "skinny" pizzas because a flour tortilla is used for the crust. I sprinkle them with cheese, grilled chicken {left over from last night's dinner, of course} and fresh vegetables! What do I use for the sauce? Wait until you hear this. . .New Hidden Valley® Roasted Garlic Ranch Dressing. Yep, dressing. That's it. . .and it tastes absolutely delicious!
I throw some of my favorite veggies on the pizza, like tomatoes, spinach and red onion. You can also use bacon if you're a bacon lover!
Assembly is simple, and the pizza comes together quickly! Spread some dressing onto the tortilla, add some mozzarella cheese, chicken, onions, tomatoes -- and don't forget the spinach! So fresh and good! I either bake these pizzas in the oven or our pizza oven. They turn out great in both!
What you end up with is a "skinny," crispy crust, grilled chicken and fresh veggies surrounded by ooey gooey mozzarella cheese and an out-of-this-world flavor combination of ranch and roasted garlic. It's quite heavenly, really.
We like to squirt some more dressing over the top of the pizzas because we're ranch lovers here in the family. And let me tell you what. This Hidden Valley® Roasted Garlic Ranch Dressing is delicious enough, well. . .to swim in.

Chicken Garlic Ranch Tortilla Pizza
Ingredients
- 2 cups cooked chicken
- 4 flour tortillas
- 1 cup baby spinach
- 1 thinly sliced red onion
- 3 thinly sliced roma tomatoes
- 2 cups mozzarella cheese
- Hidden Valley Ranch Garlic Ranch Dressing
Instructions
- Preheat oven to 425 degrees Fahrenheit.
- Place your tortillas onto a large baking sheet.
- Spread 2-3 tablespoons of ranch dressing onto each tortilla.
- Sprinkle about ½ cup mozzarella cheese on the tortillas.
- Add the chicken, red onion, tomatoes and spinach as toppings.
- Bake tortillas in oven for 7-9 minutes or until the tortilla crisps and the cheese melts.
- Turn the oven to broil and move pan to upper rack in oven.
- Broil for 1 minute.
- Remove from oven and add a little more dressing to the top of the pizza if desired.
Notes
- Tortilla Selection: Choose tortillas that are sturdy enough to hold the toppings without becoming soggy. Corn tortillas can also be used as a gluten-free option, but be mindful of their tendency to crisp up faster than flour tortillas.
- Even Topping Distribution: Spread the toppings evenly over the tortillas to ensure that each bite is flavorful and balanced. Avoid overcrowding the pizza with too many toppings, as this can prevent the tortillas from crisping up properly.
- Customize the Dressing: Experiment with different flavors of ranch dressing to suit your taste preferences. While garlic ranch adds a delicious kick, you can also try variations like spicy ranch or avocado ranch for a unique twist. Additionally, drizzle a little extra dressing on top after baking for added flavor, but be careful not to overdo it to avoid making the pizza soggy.
