So while I'm here helping run this conference for work, I've been also working behind the scenes on my new website! I've officially migrated from Blogger over to WordPress with the help of two lovely ladies, Ellie Petrov, owner of Creative Geekery, and Janine Huldie, owner of J9 Designs and Confessions of a Mommyaholic. I could have NEVER done it without the two of them! Janine seamlessly moved my blog over to WordPress in a matter of a few days - it would have probably been even quicker if I wasn't so preoccupied this week and out of town! She responded to my emails day and night and never laughed once at all of the silly questions I had. I'm pretty certain she received no less than a few hundred emails from me.
Regardless, I love my new site and I hope you do, too! I would love feedback from my readers on the design and on future content they would like to see from Bitz & Giggles. It's so funny how once you get on WordPress you just feel more "official." Between the conference and my website this week has already been a bit exhausting. It's a good thing I have someone else to cook for me this week!
Although I'm loving the lovely prepared meals and perfect desserts, at the end of the week, when I return home, I'm just going to want some good ole' home cookin' like these Italian Parmesan Chicken breasts.
This recipe transforms chicken breast halves into something wonderful, very simply. The chicken is dressed with garlic powder, Italian dressing mix and Parmesan cheese then baked in the oven for about 30 minutes. The flavorful and crispy coating surrounds a moist, tender piece of chicken that just about melts in your mouth. So easy, so quick - SOOOO what I'm going to need when I return home.
Ingredients
- 6 boneless chicken breasts
- 2 packages Good Seasons Italian Dressing mix
- ½ cup grated Parmesan cheese
- 1 teaspoon garlic powder
Instructions
- Preheat oven to 400 degrees Fahrenheit.
- In a shallow pan, mix the garlic powder, dressing mix and cheese.
- Moisten the chicken breasts with a bit of water if needed and then dredge in the cheese mixture.
- Place the chicken in a shallow baking pan and bake 25-30 minutes or until the chicken is no longer pink in the center.
Notes
- Marination Magic: For maximum flavor infusion, marinate the chicken breasts in the Italian dressing mixture for at least 30 minutes before baking. This allows the flavors to penetrate the meat, resulting in a more succulent and flavorful dish. Simply mix the dressing mix, Parmesan cheese, and garlic powder with a bit of olive oil to create a marinade.
- Crunchy Coating Upgrade: For an extra crunchy texture, consider adding breadcrumbs to the cheese mixture. After dredging the chicken breasts in the cheese mixture, press a layer of breadcrumbs onto each chicken breast before baking. This creates a crispy crust that contrasts beautifully with the tender chicken inside.
- Temperature Accuracy: To ensure perfectly cooked chicken, use a meat thermometer to check the internal temperature. Chicken is safe to eat when it reaches an internal temperature of 165°F (75°C). This prevents overcooking, keeping the chicken juicy and tender. Adjust baking time accordingly based on the thickness of the chicken breasts to avoid dryness.

Sounds like a super fast and easy way to make parmesan chicken. I may have to try this tomorrow 🙂 I have some chicken defrosting in the fridge and had no idea what to do with it.
