Lately, I've been seeing "unicorn" everything. My 6-year-old, Cora, is pretty obsessed with unicorns, too - rainbows, wings, the aura of light that surrounds them.
The unicorn craze has even made it's way into the food scene. Anything that has pops of color seems to qualify as unicorn food - even this cotton candy popcorn. So, today, we're making colorful edible cookie dough AKA edible UNICORN cookie dough.
Why cookie dough? Cookie dough has been on my mind since our last family trip to Mall of America in Bloomington, MN. They have a little shop in the mall that serves all different kinds of edible cookie dough. It looks just like an ice cream shop, but it's cookie dough, instead. Crazy cool, right?
Alright, I'm finished with the small talk. I'm pretty sure you're here for the dough. Let's get started!
First things first. We need to heat-treat the flour.
How to Heat-Treat Flour
What exactly do I mean? Well, "toasting" your flour in an oven preheated to 350º Fahrenheit for 5-6 minutes will kill off any bacteria that might be lingering in your flour before you make the cookie dough. It's a pretty important step because who wants to risk a break out of E Coli, right? Not this girl.
You just need to get the internal temp of the flour to at least 160º Fahrenheit. I've heard of some people microwaving the flour, too. The secret timing seems to be 50-60 seconds in a 1200 watt microwave.
Once your flour is ready and has been worked into the dough, you're ready to decorate!
Break Out the Food Coloring
So, here's where you break out the food coloring and a spatula. I used pink, purple and blue neon food coloring. Just put a few drops of each onto the dough and swirl them around with a spatula. There's no rhyme or reason to this. Release your inner creative beast and just go for it.
My neon pink ended up looking a bit more red than what I would have liked, but it's all good and the kids loved it.
Grab A Spoon
This edible unicorn cookie dough is not going to "melt" off of your cone in the summer! That's for sure. My kids kept asking why I put the cookie dough in an ice cream cone. I reminded them of the cute little shop we saw at the Mall of America, and they stared at me like they had no clue what I was talking about. Sigh.
This recipe in our house is now being referred to as "the weird ice cream with the sprinkles." Well, it can't be too weird since there's only a little chunk of it still left in the container in the fridge. I'll give them "weird." Sigh.
A Quick Tip
One more quick tip before I leave you to make your own weird "ice cream" - If you don't eat it all immediately, you'll need to refrigerate it in an air-tight container.
When you remove it from the fridge for a late night snack, you'll want to warm it slightly in the microwave before eating. It will seem hard and dry upon taking it out of the fridge, but slightly warming it in the microwave will return it to its true cookie dough form.

Edible Unicorn Cookie Dough
Ingredients
- 1 stick unsalted butter (softened)
- ¼ cup sugar
- ½ cup light brown sugar
- ¼ cup heavy cream
- 1 teaspoon vanilla extract
- ½ teaspoon salt
- 1 ½ cups all-purpose flour
- Food coloring - pink (purple, blue)
- 1 cup sprinkles
Instructions
- Preheat oven to 350º Fahrenheit.
- Spread the flour out on a baking sheet and bake for 6-7 minutes to kill any bacteria.
- With a mixer, cream together the butter and sugars.
- Mix in the heavy cream and vanilla.
- Mix in the salt and flour until combined.
- Spread the dough out onto a baking sheet.
- Add a few drops of each color food coloring.
- Spread color throughout dough with spatula.
- Fold in sprinkles.
- Store in fridge in an airtight container for up to 3 days.
