Summer is finally here, and that means lots of picnics, potlucks, and barbecues! This Creamy Dill Pasta Salad is the ultimate summertime dish made with bold flavors and fresh vegetables that everyone will enjoy. 

What's super great about this recipe is that it can be prepared ahead of time, so there's no need to hassle the day of! It can be paired with anything fresh off the grill or even served as a light meal. This pasta salad is sure to be a success so get ready to make another batch!

HOW TO MAKE PASTA SALAD WITH CREAMY DILL DRESSING

Before you get started, make sure you have the following ingredients:

  • Rotini pasta 
  • Miracle Whip 
  • Sour cream 
  • Lemon juice 
  • Dijon mustard 
  • Chopped fresh dill weed 
  • Black pepper 
  • Salt 
  • Frozen small salad shrimp
  • Chopped celery 
  • Chopped cucumber 
  • Halved grape tomatoes 
  • Frozen peas 
  • Minced shallot

STEPS TO PREPARING THE PASTA SALAD

Once you've gathered all of your ingredients, prepare the pasta according to the package directions and follow the steps below for a quick and easy summertime side dish.

  1. In a small mixing bowl, whisk Miracle Whip, sour cream, lemon juice, mustard, dill, black pepper, and salt. Set aside. 
  2. In a large mixing bowl, add pasta, shrimp, celery, cucumber, tomatoes, peas, and shallots. Gently stir together. 
  3. Add about ¾ of the dressing and stir well. 
  4. Chill for at least two hours to allow the flavors to meld.

Just before serving, add the remaining dressing and stir well.

TIPS FOR MAKING DILL PASTA SALAD 

  • The longer this pasta salad sits in the fridge, the better it will taste! Remember to set aside ¼ of the dressing when preparing and mix it into the salad right before serving!
  • If you find that the dressing has become too thick after chilling, you can add a little milk or pickle juice to thin it out. This will help coat the pasta evenly and ensure a creamy texture.
  • For optimal flavor and texture, incorporate fresh dill and crisp vegetables into the recipe.

WHAT CAN I SUBSTITUTE FOR THE SHRIMP IN THIS SALAD?

Pasta salads are great dishes for substitutions and add-ins. Instead of shrimp you can also use tuna, shredded chicken, or ham.

Ingredients

  • 8 ounces rotini pasta
  • 1 cup Miracle Whip
  • ¼ cup sour cream
  • 1 ½ tablespoon lemon juice
  • 1 ½ tablespoon Dijon mustard
  • ¼ cup chopped fresh dill weed
  • ¼ teaspoon black pepper
  • ½ teaspoon salt
  • 8 ounces frozen small salad shrimp (thawed and drained)
  • ½ cup chopped celery
  • ½ cup chopped cucumber
  • 1 cup halved grape tomatoes
  • ½ cup frozen peas
  • 3 tablespoons minced shallot

Instructions

  • Prepare pasta according to package directions.
  • In a small mixing bowl, whisk Miracle Whip, sour cream, lemon juice, mustard, dill, black pepper, and salt.  Set aside.
  • In a large mixing bowl, add pasta, shrimp, celery, cucumber, tomatoes, peas, and shallots.  Gently stir together.
  • Add about ¾ of the dressing and stir well. 
  • Chill for at least two hours to allow the flavors to meld. 
  • Just before serving, add remaining dressing and stir.

Notes

  • The longer this pasta salad sits in the fridge, the better it will taste. 
  • If you find your pasta it a bit thick after chilling, add a splash of milk or pickle juice to thin it out. 
  • You can substitute the shrimp with tuna, ham or chickpeas.
