Ingredients

  • 24 ounces semi-sweet chocolate chips
  • 1 ½ cups Breyers® Gelato Indulgences™ (your choice of flavor)

Instructions

  • Take the gelato out of the freezer and allow it to begin to thaw.
  • Line the inside of an 8x8 pan with aluminum foil and spray with nonstick spray.
  • Place the chocolate chips in a microwave bowl and warm in microwave, stirring every 30 seconds or so until it is melted and smooth. Take care not to overheat.
  • Add the softened ice cream to the chocolate and stir until well-combined. The mixture will begin to harden a bit.
  • Return the bowl to the microwave for 25-30 seconds or until the mixture is smooth.
  • Pour the fudge evenly into the pan and refrigerate for 1 hour.
  • After the fudge is set, lift the foil out of the pan and cut into small squares.
  • The fudge can be stored at room temperature in an airtight container for up to two weeks.

Notes

  1. Gelato Softening: Ensure the gelato is softened to a spreadable consistency before mixing it with the melted chocolate. Allow it to thaw at room temperature for a few minutes until it becomes slightly softened but not fully melted. This makes it easier to incorporate into the chocolate mixture and ensures a smooth, creamy texture in the fudge.
  2. Microwaving Chocolate Chips: When melting the chocolate chips in the microwave, be cautious not to overheat them, as this can cause the chocolate to seize or burn. Stir the chocolate every 30 seconds to distribute the heat evenly and prevent hot spots. Stop microwaving as soon as the chocolate is melted and smooth, even if there are still a few unmelted chips remaining. The residual heat will help melt them as you stir.
  3. Smooth Texture: After combining the melted chocolate with the softened gelato, return the mixture to the microwave for a brief period to ensure it is smooth and well-combined. Microwave for only 25-30 seconds, as overheating can cause the fudge to become grainy or lose its creamy texture. Stir the mixture thoroughly until it is smooth and homogeneous before pouring it into the prepared pan for setting. This step helps ensure a silky texture in the finished fudge.
