    • Pimentos add a mild sweetness and bright red color to the salad

    Substitutions & Variations

    • Some other pasta shape options that work well with this recipe include shell, elbow macaroni, or bow tie. You can use any pasta shape that will hold the dressing well.
    • In place of Miracle Whip, you can use mayonnaise. You can also use greek yogurt, but it will taste a bit different than using Miracle Whip or mayonnaise.  
    • Add any extra veggies or spices of your choice to your pasta. Peas, chopped carrots and diced cucumbers are just a few options.
    • You can add diced meat to your pasta salad, such as ham, chicken, tuna, shrimp or bacon!
    • You can use chopped bell pepper in place of the pimentos.
    • To make your own relish, you can finely chop bread and butter pickles. 
    • You can use less sugar if you want your pasta salad to be less sweet. However, be sure to use at least 2 tablespoons of sugar to keep this salad tasting balanced.

    How to Make Amish Pasta Salad

    Follow the steps below to make this creamy and satisfying salad:

    1. In a medium mixing bowl, whisk Miracle Whip, sour cream, sugar, yellow mustard, apple cider vinegar, garlic powder, paprika, pepper, and celery seed together until smooth. Set aside.

    1. In a large mixing bowl, combine prepared pasta, chopped eggs, celery, onion, pimentos, green peppers, and sweet relish. Stir well.

    1. About 30 minutes prior to serving, pour Miracle Whip mixture over noodles.

    1. Stir well to combine. Chill and serve!

    Helpful Tips

    • Whether it’s leftover veggies or extra hard-boiled eggs, this recipe provides a great way to use up any leftovers you have in your refrigerator!
    • Make sure to rinse the noodles thoroughly under cold water after cooking them and before adding to the salad.
    • If your pasta leftovers get dry, you can add more Miracle Whip before eating or serving.
    • Be sure to not overcook the pasta to ensure that the dressing and flavors can properly be absorbed into the pasta noodles. 
    • Amish Pasta Salad can be left out of the cooler or refrigerator for at most 2 hours. After 2 hours, let it cool in the fridge for at least 30 minutes before serving again.

    Yes, you should rinse the pasta after cooking it for pasta salad. Rinsing helps cool the pasta quickly and removes excess starch, preventing it from becoming sticky. This ensures your salad has a better texture and the dressing coats the pasta evenly.

    What's the difference between mayo and Miracle Whip?

    What if the pasta salad "dries out" a bit after sitting in the fridge?

    To keep pasta salad from drying out, ensure the pasta is not overcooked, and add enough dressing. If it seems dry after refrigeration, you can stir in a bit more dressing before serving.

    Ingredients

    • 16 ounce box rotini pasta (prepared to al dente according to the package directions)
    • 1 ½ cups Miracle Whip
    • ½ cup sour cream
    • ½ cup sugar
    • 2 tablespoons yellow mustard
    • 3 teaspoons apple cider vinegar
    • ¼ teaspoon garlic powder
    • ½ teaspoon paprika
    • ¼ teaspoon black pepper
    • ½ teaspoon celery seed
    • 5 eggs (hard-boiled and chopped)
    • 1 cup chopped celery
    • ½ cup chopped onion
    • 2 ounce jar pimentos (drained)
    • 1 cup chopped green pepper
    • 3 tablespoons sweet pickle relish

    Instructions
