At our house the grill is still going strong. What about at your house? Are you still grilling, or are you beginning to break out the slow cooker and oven-baked recipes, gearing up for fall? I'm just not quite ready for that yet! Today I'm sharing a recipe for Cilantro Lime Chicken Skewers - tender pieces of chicken breast marinated in cilantro, lime and garlic, skewered and then grilled to perfection! Can I get an AMEN?
It's such a wonderful summer recipe, and I love the citrus taste that's infused into the chicken from the lime juice.
So, I bet you're wondering what to do with these chicken pieces once you've grilled them. Well, you could just remove the chicken from the skewers, serve with a starch and a veggie and call it good OR you could put the chicken on top of a bed of rice and top with some fresh, beautiful salsa.
What and where is this beautiful salsa I speak of? You NEED to come over to This Silly Girl's Life where I'm sharing the recipe for this wonderful Avocado Salsa I used to add some color and and even more flavor to this tasty chicken! Be sure to check it out!
Cilantro Lime Chicken Skewers
Ingredients
- 4 boneless chicken breasts
- 2 tablespoons cilantro
- 1 lime (juiced)
- ¾ cup olive oil
- 1 tablespoon minced garlic
- 2 teaspoons honey
- 1 teaspoon red pepper flakes
- Salt & pepper to taste
Instructions
- Cut up the chicken breasts into bite-size pieces.
- Season them with salt and pepper, to taste.
- In a bowl, combine the olive oil, garlic, lime juice, honey and red pepper flakes.
- Pour mixture into a ziploc bag and add in the chicken pieces.
- Refrigerate for 30 minutes to an hour.
- Place the marinated chicken pieces onto skewers and grill over medium heat, turning skewers once until the chicken is no longer pink in the center - about 5 minutes per side
Notes
- Marinate for Optimal Flavor: Marinating the chicken pieces in the cilantro lime marinade adds depth of flavor and ensures juicy, tender meat. Allow the chicken to marinate in the refrigerator for at least 30 minutes to an hour before grilling. This gives the flavors time to infuse into the chicken, resulting in a more flavorful and delicious dish.
- Soak Skewers Before Grilling: If you're using wooden skewers, soak them in water for at least 30 minutes before threading the chicken onto them. This prevents the skewers from burning during grilling and helps keep the chicken secure while cooking. Soaking the skewers also prevents them from splintering and breaking, ensuring a hassle-free grilling experience.
- Grill with Even Heat: When grilling the chicken skewers, ensure that the grill is preheated to medium heat. This ensures even cooking and prevents the chicken from drying out or burning on the outside while still being raw in the center. Grill the skewers for about 5 minutes per side, turning them once halfway through, until the chicken is cooked through and no longer pink in the center. Use a meat thermometer to ensure the internal temperature of the chicken reaches at least 165°F (74°C) for safe consumption.

Your chicken skewers sound delicious! We're still grilling here in Florida and will be for a while. Love using the grill instead of heating up the kitchen. Thanks for sharing with Creative Spark Link Party. Hope you join us again tomorrow.

Fall has definitely kicked in here in Wisconsin. It will be sad to say goodbye to the grill, but I have to admit I'm getting a bit excited about using the crockpot again!

Sara, just coming from the Pinit Party!! You have made these look so inviting, my chicken seems to be a little dry, I have tried marinades and oils while cooking, Do you have a suggestion? The idea of putting them on a bead of rice with the salsa sounds good, I am checking the recipe for the salsa too.
I just shared your recipe on Pinterest.

Hi Karren! Chicken CAN get dry, but skewering it can actually help because you're working with smaller pieces that will cook more evenly. Unlike a steak you should sear on the outside first to seal in the juices, when you put chicken on the grill, cook it from the inside out - so over lower heat and for a longer time. Good luck and yes, you need to try it with the rice and salsa!

Looks delish a must try for sure! Great share 🙂
