Spring has SPRUNG in Wisconsin! Oh, I am so happy! Today we’re supposed to get to 60 degrees – 60 degrees! That’s big, friends. That means the neighborhood will be buzzing at the end of the day. Everyone will be outside cleaning up the debris left behind from the harsh winter, taking their dogs for walks, dusting off kids’ bicycles that have been hanging in the garage all winter and firing up their grills again. . .because they’re no longer snow-covered.
I knew there would be some jealousy from the crock pot, so I planned a delicious dinner made just for. . .it. The Crock Pot Chicken and Broccoli recipe I’m sharing today is SO good. It’s creamy, cheesy and even better heated up the next day. Bonus!
I love serving this over linguine noodles, but if you prefer rice, that would work, too! The chicken breasts just fall apart when cooked in the slow cooker. I love that – because why dirty knives if you don’t have to? This is a knife-free dish. Fork only.
Just twirl your fork right in the middle of that deliciousness, lift and insert into your mouth. It’s that easy. Did I mention that this dish comes together almost as easily as that, too? You put the chicken in the crock pot with a soup mixture, walk away for a couple hours, shred the chicken, add some additional ingredients and it’s ready to go.
Just place the crock pot on the warm setting if you’re not quite ready to eat right away – or eat and then spoon the leftovers into microwaveable containers for tomorrow. I will miss the crock pot a bit. Do I use it in the summer? Of course, but just between you and me {it’s okay, the crock pot can’t hear me}, the grill will be getting a bit more love now that we can access it without snowsuits.
Hey, neither of these appliances should be complaining, because they take their turns. Each of them has a place in our family – a time and a place. Make your slow cooker “feel needed” one last time and make this delicious dish before you start grilling burgers and eating more than your fair share of corn on the cob. It’s such a great comfort food recipe – just do it. For you. . .and for your slow cooker.
Crock Pot Chicken & Broccoli
Chicken and broccoli is combined in a creamy and cheesy sauce, perfect for topping noodles or rice!
Ingredients
- 3–4 chicken breasts, thawed
- 1 can cream of chicken soup
- 1 can broccoli cheese soup
- 14.5 ounce chicken broth
- 5 cups broccoli florets, steamed or cooked
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- Garlic powder, to taste
- Salt, to taste
Instructions
- Season the uncooked chicken breasts with garlic powder and salt, to taste.
- Place the chicken breasts into the crock pot.
- Whisk together the soups and the chicken broth in a bowl.
- Pour the soup mixture over the chicken breasts.
- Place the lid on the crock pot and cook on low for 5-6 hours or high for 2-3 hours.
- When the chicken is cooked, shred the meat and then stir in the sour cream and broccoli.
- Stir in the shredded cheese immediately before serving.
- Serve over cooked linguine noodles or rice.

Yes, frozen broccoli should work fine!
Do you add the frozen broccoli with the chicken that cooks or after th chicken cooks and you shred it?
Check out step 6 in the recipe. When the chicken is cooked, shred the meat and then stir in the sour cream and broccoli. Good luck!
