So, I don't know about you, but I find myself in Walmart several times a week. I go there because I can get everything I need in one trip. I know the layout like the back of my hand so it's easy for me to run through the aisles and grab everything I need, quickly. So, last week, here's what happened. . .I got stuck in the baking aisle. From egg-shaped marshmallows to spring Funfetti cake mix, I knew my cart wouldn't move until I threw in some of that bright colored sweetness. This is what I ended up with.
There was only one thing to make. . .Cake Batter Truffle Bars. These sweet, chewy, decadent bars are so colorful! It's a sprinkle, chocolate chip, marshmallow, and Oreo explosion! Let me just set things straight right away - these bars can be enjoyed year round - with any leftovers you have in your pantry, really.
So here's a high level overview of the steps:
- Mix the cake mix and the sprinkles.
- Add the egg and butter and press ⅔ of the dough into the foil-lined pan.
- Next come the marshmallows.
- Then the Oreo pieces.
- Then the chocolate chips.
- Drizzle the sweetened condensed milk over the top.
- Roll the remaining ⅓ dough into small truffle balls and place evenly on top of the bars.
- Then throw it into the oven.
And here's what you get! Look at those lightly browned marshmallows, the soft cake batter truffles on top. . .oh my. These bars, my friends, are the bomb {do people still say that?}. Believe it or not, I made them three times in one week. I started doubling the recipe to make 9x13 inch pans of them.
They're so easy to make and who doesn't love a dessert that helps you use up bits and pieces of sweets you have left in the pantry. Most of the ingredients that are in these bars, I have in my pantry all of the time. I gave these bars a bit more of a spring look, but with a little creativity, you could adapt them to any holiday or season!
The little truffle balls give the bars that extra kick of cake batter taste. Love that. They also bring a bit of uniqueness to the dessert, don't you think?
So, just do it, start rummaging through your pantry or lazy susan for half eaten bags of chocolate chips, leftover marshmallows, almost expired boxes of cake mix - whatever you can find and bake a pan of these bars. When my hubby saw me making these, he rolled his eyes.
Once they were out of the oven he tasted them, looked at me again and grabbed another. Between he and the kids they finished the first pan in about a day - then, we got the neighbors hooked. I had to pass my friend, Terrie, the recipe even before I was able to post it here.

Cake Batter Truffle Bars
Ingredients
- 1 box funfetti cake mix (I used a seasonal spring mix)
- 1 stick butter (softened)
- 1 large egg
- ½ cup mini marshmallows
- ½ cup sprinkles
- ½ cup sweetened condensed milk
- 6 Oreos (I used the seasonal Spring Oreos, crushed)
- 1 cup Nestle Springtime morsels (or ½ cup white chocolate chips and ½ cup semi-sweet chocolate chips)
Instructions
- Preheat oven to 350 degrees.
- Line a 9x11 inch baking dish with aluminum foil and spray with cooking spray. Set aside.
- In a bowl, combine the cake mix and the sprinkles.
- Add the egg and butter and beat together with a hand mixer until a thick dough forms.
- Press ⅔ of the dough into the bottom of the baking pan.
- Sprinkle the marshmallows over the dough.
- Sprinkle the Oreos over the marshmallows.
- Sprinkle the morsels over the Oreos.
- Pour the sweetened condensed milk evenly over the top.
- Separate the remaining dough into small truffle balls and space them evenly over the top.
- Bake for 30 minutes or until the bars and marshmallow begins to brown.
- Cool completely before cutting.
Notes
- Even Distribution: Ensure that the ingredients are evenly distributed throughout the Cake Batter Truffle Bars for consistent flavor and texture in each bite. Spread the dough evenly across the bottom of the baking dish, sprinkle the marshmallows, Oreos, and morsels evenly over the layers, and pour the sweetened condensed milk evenly over the top. This ensures that every bite is filled with deliciousness.
- Pressing the Dough: When pressing the dough into the bottom of the baking pan, use your hands or the back of a spoon to press it firmly and evenly. This helps create a solid base for the bars and prevents them from crumbling when cut. Pressing the dough ensures that the bars hold together well and have a cohesive texture.
- Cooling for Cutting: Allow the Cake Batter Truffle Bars to cool completely in the baking dish before cutting them into squares. This allows them to set properly and makes cutting cleaner and easier. Cooling also enhances the flavors and textures of the bars, allowing them to firm up and develop their full deliciousness. Use a sharp knife to cut the bars into squares, wiping the knife clean between cuts for neat edges.
