    Old-Fashioned Lemon Icebox Cake

    Old-Fashioned Lemon Icebox Cake - Irresistible layers of creamy lemon filling, crunchy lemon Oreo cookies, and soft and sweet whipped topping!

    This Old-Fashioned Lemon Icebox Cake is the perfect summer dessert for when you want something sweet but don’t want to bake! It’s fresh, citrusy and super easy to whip up with only five simple ingredients!

    The combination of tart lemon filling and lemon flavored Oreos makes this dessert burst with bright citrus flavor. If you’re a fan of lemon, this dessert is a great weekend treat for the summertime!

    HOW TO MAKE LEMON ICE BOX CAKE

    Before you get started, make sure you have the following:

    • Lemon Oreos 
    • Instant lemon pudding 
    • Milk 
    • Lemon zest 
    • Whipped topping

    ASSEMBLING THE LEMON ICEBOX CAKE

    Once you’ve gathered all your ingredients, follow the steps below for a sweet and simple summer dessert!

    1. Place one layer of Oreos in the bottom of a 9x13-inch dish. You may have to cut Oreos in half so they fit well. 
    2. In a large mixing bowl, beat lemon pudding mix and milk until thickened. 
    3. Add lemon zest and half of the whipped topping. Stir until combined. 
    4. Spread half of the lemon mixture over top of Oreos. 
    5. Add another layer of Oreos. 
    6. Spread remaining lemon mixture over Oreos. 
    7. Add another layer of Oreos. 
    8. Spread remaining whipped topping over Oreos.

    Cover with plastic wrap and chill in the refrigerator for at least 4 hours.

    TIPS FOR MAKING OLD-FASHIONED LEMON ICEBOX CAKE

    • If you want to add some color or a little more sweetness to your cake, garnish with lemon wedges, fresh blueberries or raspberries, or caramel sauce!
    • This recipe is great to make 1-2 days ahead of time! The longer it sits in the fridge the more the flavors will meld!
    • If you prefer to use homemade whipped topping, be sure not to overbeat it.

    WHAT COULD I SUBSTITUTE FOR THE OREOS IN THIS LEMON ICEBOX DESSERT?

    If you’re looking for other cookies that taste great in this recipe, graham crackers, shortbread cookies, and vanilla wafers are all delicious substitutions for the lemon Oreos!

    HOW DO YOU STORE LEMON ICEBOX CAKE?

    Store leftovers in an airtight container in the refrigerator for 4 days.

    CAN YOU FREEZE LEMON ICE BOX CAKE?

    Yes! The cake will freeze nicely nicely wrapped in plastic wrap. You can freeze the cake for up to one month. Allow the the cake to thaw in the fridge overnight before serving.

    Ingredients

    • 105 Lemon Oreos
    • 2 - 3.5 ounce boxes instant lemon pudding
    • 2 ½ cups milk
    • 1 tablespoon lemon zest
    • 8 ounces whipped topping

    Instructions

    • Place one layer of Oreos in the bottom of a 9x13-inch dish.  You may have to cut Oreos in half so they fit well.
    • In a large mixing bowl, beat lemon pudding mix and milk until thickened.
    • Add lemon zest and half of whipped topping.  Stir until combined.
    • Spread half of the lemon mixture over top of Oreos.
    • Add another layer of Oreos.
    • Spread remaining lemon mixture over Oreos.
    • Add another layer of Oreos.
    • Spread remaining whipped topping over Oreos.
    • Cover with plastic wrap and chill in the refrigerator for at least 4 hours.

    Notes

    • Allow time for this cake to sit in the fridge for a day or two to give it enough time for the flavors to meld. 
    • You can also use graham crackers, vanilla wafers or shortbread cookies in substitute for Oreos. 
    • Store leftovers in the fridge for 4 days in an airtight container.
