    You all are going to have to forgive me. I know I've been slacking lately. What's this one post a week stuff? The truth of the matter is, I lightened up the workload a bit this summer to enjoy time with family and friends and spend a bit more time in the sunshine. And boy. . .it's been nice. The return of school for the kids and the start of cooler temps are gentle reminders that it's time for me to get back to business, however.

    If you're a returning reader, thank you. I promise I'll start getting back into my regular routine. If you're visiting me for the first time, thank you. I promise there are some great recipes and ideas coming your way for the fall. So, EVERYONE, stick with me.

    The past few weeks I've been paying a bit more attention to my oven again. I'm gradually working my way back into the kitchen after a couple months of grilling and no-bake desserts.

    I thought an easy loaf of bread would be a good place to start. This Peanut Butter Bread is a six-ingredient recipe and literally takes minutes to mix together.

    When people hear the phrase "peanut butter bread," they most often think of a normal piece of bread with creamy peanut butter spread over the top. Is that what you think of, too?

    This, my friends, is not just normal bread. It's infused with peanut butter, and perfect for households that have an addiction to peanut butter. Kind of like ours.

    The texture of the peanut butter bread is a bit like banana bread. It's dense, but surprisingly soft and moist. Can it be both of those things at the same time? In this instance, yes.

    If you completely love peanut butter, you can just spread peanut butter on top of this bread. We have tried grape jelly and Nutella. My absolute favorite topping is the peanut butter chocolate spread from Reese's. OMG. I use this stuff on my ice cream bread, too. Heaven.

    This time, all I had in the house was peanut butter, but that was a-okay with me. Peanut butter fans rejoice. . .and start warming up those ovens. 😉

    Ingredients

    • ½ cup sugar
    • 1 large egg (beaten)
    • 1 cup milk
    • 2 heaping teaspoons baking powder
    • ⅔ cup peanut butter
    • 2 ½ cups flour

    Instructions

    • Preheat oven to 350 degrees Fahrenheit.
    • Cream sugar, egg and peanut butter in a medium bowl.
    • Add milk and flour alternately.
    • Pour into greased loaf pan.
    • Bake for 37-40 minutes.

    Notes

    1. Creaming Method for Better Texture: When creaming together the sugar, egg, and peanut butter, ensure thorough mixing to achieve a smooth and uniform consistency. Creaming incorporates air into the mixture, resulting in a lighter texture in the finished bread. Use an electric mixer or a sturdy whisk to ensure the ingredients are well combined.
    2. Alternating Wet and Dry Ingredients: Adding the milk and flour alternately helps ensure even distribution of ingredients and prevents overmixing, which can result in a dense and tough bread. Begin and end with the dry ingredients (flour), adding them in batches and mixing until just combined. This method helps create a tender and moist crumb in the finished loaf.
    3. Check for doneness: To determine if the peanut butter bread is fully baked, perform a toothpick test. Insert a toothpick into the center of the loaf—if it comes out clean or with a few moist crumbs, the bread is done. If the toothpick comes out with wet batter, continue baking for a few more minutes and check again. Be mindful not to overbake, as this can result in dryness.
