    It's Thanksgiving! I'm so excited about the meal today! Oh, and guess what? I have another Thanksgiving dinner to look forward to tomorrow! That's the joy of having both sides of the family nearby.

    For all of you who have plans tomorrow to do some Black Friday shopping, I'm curious to know how many of you are actually going to stores and how many are just chilling out at home shopping on your phones and laptops. For me it will be the latter - except it will be at my parents' house and not at home.

    Regardless, if you have any turkey left over from the big meal today, do I have the recipe for you!

    This Turkey Crescent Roll Casserole is sure not to disappoint! Savory turkey and bright mixed vegetables are topped off with a flaky, buttery lattice crust and baked to perfection! What a perfect way to use up that leftover turkey!

    HOW TO MAKE TURKEY CRESCENT ROLL CASSEROLE

    Before you get started, make sure you have the following ingredients:

    • Diced onions 
    • Minced garlic 
    • Mayonnaise 
    • All-purpose flour 
    • Chicken soup base 
    • Pepper 
    • Milk 
    • Frozen mixed vegetables,  thawed 
    • Cubed cooked turkey breast 
    • Refrigerated crescent rolls 
    • Egg

    Once you’ve gathered all your ingredients and preheated the oven to 375ºF, follow the steps below for a great post-Thanksgiving dish!

    PREPARING THE TURKEY CASSEROLE

    1. In a small greased saucepan, saute onions and garlic until transparent. Set aside. 
    2. In a large skillet, add mayonnaise, flour, soup base, and pepper. Whisk together over medium heat. 
    3. Slowly pour in the milk, whisking continuously for about 2 minutes until the mixture thickens. 
    4. Add the prepared onions and garlic, mixed vegetables, and cubed turkey.

    CREATING THE LATTICE CRUST

    1. Mix the veggies and turkey together well and transfer the mixture to a greased 8x8-inch baking dish. 
    2. Lay crescent roll triangles on a nonstick surface and press the seams together. Using a pizza cutter, cut the crescent rolls into 8 long pieces.
    3. Then, using the dough pieces, create a lattice design on top by weaving each piece.
    4. In a small bowl, whisk egg and brush egg onto crescent rolls. Lastly, bake for 20 minutes or until the lattice crust is baked and golden brown.

    TURKEY CRESCENT ROLL CASSEROLE TIPS

    • This recipe also works well with cooked chicken whether you bake it or buy a rotisserie chicken from the deli section at the store. 
    • If frozen vegetables aren’t your thing, feel free to use fresh mixed vegetables instead. Just remember you'll need to steam or sauté them first. 
    • You can assemble the casserole a day in advance and keep it covered in the refrigerator until ready to bake. Make sure you allow the dish to sit on the counter and come to room temperature for at least 30-60 minutes before putting it in the preheated oven.

    HOW LONG WILL LEFTOVER TURKEY KEEP AFTER THANKSGIVING?

    Leftover turkey will keep for 3-4 days in the refrigerator, or 2-3 months in the freezer. If you have a lot of leftovers, you can freeze the turkey and use it for recipes later.

    CAN I ADD OTHER INGREDIENTS TO THIS TURKEY CASSEROLE?

    Since this casserole is customizable, almost anything you can imagine would be a great addition to this dish!

    Some more popularly used ingredients include leftovers such as mashed potatoes, stuffing, green beans and corn.

    HOW DO YOU STORE TURKEY CRESCENT ROLL CASSEROLE?

    This recipe can be stored in an airtight container for up to a week.

    CAN I FREEZE TURKEY CRESCENT ROLL CASSEROLE?

    Yes! You can freeze this casserole for up to six months. Be sure to cover with plastic wrap and then with aluminum foil before freezing.

    Plan to add the crescent rolls when you’re ready to bake!

    Ingredients

    • ½ cup diced onions
    • 2 tablespoons minced garlic
    • ½ cup mayonnaise
    • 2 tablespoons all-purpose flour
    • 1 teaspoon chicken soup base
    • ¼ teaspoon pepper
    • 1 cup milk
    • 2 cups frozen mixed vegetables (about 10 ounces, thawed)
    • 1 ½ cups cubed cooked turkey breast
    • 1 tube (4 ounces refrigerated crescent rolls)
    • 1 egg
