    • 4 large ripe tomatoes (diced)
    • ½ red onion (diced)
    • 2 tablespoons diced fresh basil (plus more for garnish)
    • 2 garlic cloves (minces)
    • 1 teaspoon oregano
    • ½ teaspoon salt
    • ¼ teaspoon pepper
    • 5 tablespoons olive oil (divided)
    • 3 tablespoons balsamic glaze
    • 1 cup mozzarella balls
    • ¼ cup shredded parmesan cheese

    Instructions
