    Hi friends! Happy Monday! We had such a busy weekend! Did you, too? Josh and I went up north to our lake cabin to open it up for the summer. It was so nice to see all the ice off of the lake. It's about time! I cleaned the cabin from top to bottom, and it's officially ready for Memorial weekend (which will be here before we know it)!

    I also have some travel this week that I'm super excited about. I'm headed to Las Vegas for a retreat with some of my closest blogging buddies! This is going to be the first time I get to meet all of them in person, and I am beyond excited. The long weekend will be filled with lots of sharing, learning, eating and laughing of course. I. CANNOT. WAIT.

    Life has been busy to say the least, so I'm popping in today with a shorter post than maybe what you're used to from me, but a post all the same, with a wonderful recipe I couldn't wait to share. These Chocolate Crunch Bars have so much going on! They have a cake-like crust with a gooey marshmallow center and chocolate peanut butter krispie frosting! Soft. Gooey. Crispy. Check. Check. Check.

    This is a wonderful dessert to take to a potluck or picnic just like these Sugar Cookie Cake Bars or my favorite O'Henry Bars. The bars cut really nice and they're just a joy to eat. They're bound to become a family favorite for sure!

    Ingredients

    • ½ cup butter
    • 1 cup sugar
    • 2 eggs (slightly beaten)
    • ¾ cup flour
    • 1 teaspoon salt
    • ½ teaspoon baking powder
    • 1 square unsweetened melted chocolate
    • 2 cups miniature marshmallows
    • 6 ounces chocolate chips
    • ½ cup peanut butter
    • ½ cup Krispie cereal

    Instructions

    • Preheat oven to 350 degrees Fahrenheit.
    • Beat the butter, sugar, eggs, flour, salt and baking powder for 1 minute.
    • Add melted chocolate.
    • Put into a greased 13x9" pan and bake for 15-17 minutes.
    • Remove from oven.
    • While bars are still warm, cover with miniature marshmallows; return to oven for 3 minutes. Cool.
    • Melt chocolate chips with peanut butter; add cereal.
    • Spread over cooled bars.

    Notes

    1. Ensure Proper Mixing: When beating together the butter, sugar, eggs, flour, salt, and baking powder, aim for a smooth and consistent batter. Beat for at least 1 minute to ensure all ingredients are well incorporated, resulting in a uniform texture for your bars.
    2. Mind the Marshmallows: When adding the miniature marshmallows to the warm bars, make sure they are evenly distributed. Press them gently into the warm bars to help them adhere. Returning the bars to the oven for 3 minutes helps soften and slightly melt the marshmallows, creating a gooey layer that enhances the texture of the bars.
    3. Careful with the Chocolate Peanut Butter Topping: When melting the chocolate chips with peanut butter for the topping, use low heat and stir frequently to prevent burning or scorching. Once melted, quickly stir in the Krispie cereal until well coated. Spread the mixture evenly over the cooled bars for a deliciously crunchy topping. Allow the topping to set completely before cutting the bars into squares for clean slices.

      This looks really good, but how much chocolate chips are in them! My guess would about 1 cup?

        Thank you Marie for catching that! I just updated the recipe. I usually use 6 ounces of chocolate chips. I bet you could get away with a cup though to make them even more decadent. 😉
