    Da, da, dahhhhh!! It's another air fryer recipe! Oh, don't be so surprised. I'm officially naming January - air fryer month. At least it is in our house. I mean what CAN'T an air fryer make?!

    From chicken to shrimp, to corn on the cob. . .and now baked potatoes, I've been having all sorts of fun with my air fryer as of late!

    This baked potato deliciousness starts with a little olive oil and lots of seasoning.

    I don't know about you, but I'm that person that eats the skin of a baked potato. Do you? I think the skin holds some of the best flavor! The combination of some salt, pepper and garlic powder make the skin pretty irresistible.

    So, let me just address the elephant in the room. These are some REALLY BIG baked potatoes. I get it. I cooked these babies for about 45 minutes. They certainly would have taken longer in a traditional oven.

    A "normal-sized" potato takes about an hour of baking time in an oven preheated to 400º Fahrenheit. With an air fryer you can usually cut that time in half.

    Can we talk about the skin just a little bit more? It's so crispy and delicious. The crisp-factor is unlike anything you could ever achieve in a microwave or oven. Crazy good.

    And after you fluff the potato, pile on the butter, sour cream and a few extra shakes of seasoning, you're definitely in business. There's no going back.

    I've officially become addicted to my air fryer and I apologize (well, kind of). That's not to say you won't be seeing more air fryer recipes popping up on the blog. In fact, you may just want to brace yourselves because there are several more coming your way. I plan to use this new gadget all the way through spring, summer and fall.

    Don't be surprised if it moves from storage downstairs to a brand new spot in my kitchen cupboard upstairs. George Foreman grill and Pampered Chef baking stone. . .I'm looking at you. You best start packing your bags. 🙂

    Ingredients

    • 4 large baking potatoes (cleaned)
    • 2 tablespoons olive oil
    • Coarse kosher salt
    • Pepper
    • Garlic powder
    • Parsley
    • ½ stick butter (4 tablespoons, divided)
    • Sour cream (optional)

    Instructions

    • Rub potatoes with olive oil.
    • Season potatoes with salt, pepper, garlic powder and parsley to taste.
    • Place in air fryer and cook at 400 degrees for 40-50 minutes (depending on size of potatoes).
    • Slice potatoes lengthwise; using both hands, pinch each side of the potatoes, forcing the inside of the potato up.
    • Place 1 tablespoon of butter in each of the potatoes and finish with a dollop of sour cream if you'd like.

    Notes

    1. Preparation Technique: Ensure thorough and even cooking by scrubbing the potatoes clean and rubbing them with olive oil before seasoning. This helps to create a crispy skin while keeping the inside fluffy and tender. Pierce the potatoes with a fork a few times to allow steam to escape during cooking, preventing them from bursting.
    2. Seasoning Variation: Customize the flavor of your easy air fryer-baked potatoes by adjusting the seasoning to your taste preferences. Experiment with different herbs and spices, such as rosemary, thyme, or paprika, for added depth of flavor. Don't forget to sprinkle a generous amount of coarse kosher salt to enhance the natural taste of the potatoes.
    3. Cooking Time Adjustment: Depending on the size of your potatoes and the wattage of your air fryer, cooking times may vary. Monitor the potatoes closely towards the end of the cooking process to prevent overcooking or undercooking. Use a fork to test for doneness; it should easily pierce through the potatoes with little resistance. Adjust the cooking time accordingly for perfectly baked potatoes every time.

      For air fryer baked potatoes microwave 15 mins first, in 5 min increments, then rub with olive oil salt, pepper, air fry 10 to 15. Once they soften, they fry up quickly. Best ever!!!! Even if you do in regular oven, nuke first, rub oil s&p, put on foil, bake 20 mins, turn once

      After 40 minutes in the air fryer at 400 degrees potatoes have a lovely crisp brown skin but almost raw in the middle. Had to put them in the microwave. Not sure what went wrong there

        Hmmm. It just may be that your air fryer cooks a bit cooler. Try allowing them to cook a bit longer. Sometimes it takes some experimentation. You could also try using a fork to make some holes in the potatoes next time.

        Yes, 400º Fahrenheit. This is a standard temperature for our air fryers in the U.S.

        It's not necessary to flip, but if the potatoes are larger, it could definitely help to ensure they're cooked through!

      Funny- your recipe just popped up on my P and just made these last night as a trial - so pleasantly surprised at the crispiness of the skin and how the flesh popped out of the skin so easily ...worked well for me as my daughter loves the inside and I eat the skin! So I read your post and love the idea of seasoning the skin and definately will do next time, however curious ... traditionally baked potatoes are pierced with a fork and then baked ... did you pierce your potatoes too before aurfrying? Thank you for sharing

      I have tried potatoes twice and both times after what I believe cooking time total of 40 min they were not done. My cooker say 390° and they were not huge, but they medium. What could I have done wrong? Opening my fryer too often maybe?

          I have a kalorik air fryer I got for Christmas, do the times vary from fryer to fryer..?

            They can, Janet, so it often takes some trial and error with cooking times. Check on your food often and invest in a digital thermometer that's helpful for meats. If you find that your food isn't quite done when following air fryer recipes online, you can try preheating for 5 minutes or so before placing your food into the fryer. Good luck!
