    Ingredients

Gather the ingredients below to make this easy ice cream cake!

Ingredients for an ice cream sandwich cake laid out on a white table.
    • Ice cream sandwiches - Use your favorite ice cream sandwich brand, preferably ones that are softer and less crumbly, so they hold together better while you prepare the dessert.
    • Chocolate sauce - Choose your favorite chocolate sauce or hot fudge for the best flavor. If it’s too thick, you can microwave it briefly so it’s easier to spread and pour.
    • Caramel sauce - Use a sauce that’s creamy and not too runny.
    • Whipped topping - Both store bought and homemade whipped topping will work great!
    • Heath English Toffee Bits add the perfect crunch and buttery flavor to the dessert.

See recipe card for full information on ingredients and quantities.

    Substitutions & Variations

    • Ice cream sandwich flavors - Switch up the ice cream sandwich flavor for even more customization. Chocolate, strawberry, mint, and cookies and cream are just a few of the delicious alternatives to vanilla!
    • Endless topping possibilities - Feel free to top this delicious dessert with your favorite candy and toppings! M&M’s, snickers, peanuts, cookie crumbles, or any other sweet crunch you can think of adds the perfect personalized touch!
    • Change up the layers - Use different ice cream sandwiches, adjust the sauces, or add marshmallow fluff or extra whipped topping. For more fun frozen layers, try our Ultimate Ice Cream Sundae Pie!

How to Make This Ice Cream Sandwich Dessert

Once you've gathered all your ingredients, grab a 9x13 baking pan and follow the steps below for this delicious no-bake dessert!

Ice cream sandwiches lined up in a 9x13 pan as the base layer of the dessert.
    1. Step 1: Unwrap all the ice cream sandwiches and arrange a single layer in the bottom of a 9x13 baking pan, cutting them as needed to fit evenly.
Hot fudge topping spread evenly over the first layer of ice cream sandwiches.
    1. Step 2: Cover first layer of ice cream sandwiches completely with chocolate sauce.  (You may need to microwave it briefly so it can be poured and spread easily.)
A layer of ice cream sandwiches placed on top of the chocolate sauce.
    1. Step 3: Place the second layer of ice cream sandwiches on top of the hot fudge topping.
Caramel sauce covering the second layer of ice cream sandwiches.
    1. Step 4: Cover the ice cream sandwiches completely with caramel sauce.
Whipped topping spread over the entire dessert, creating a smooth, white layer.
    1. Step 5: Gently spread the whipped topping over the caramel layer, then cover the dish with plastic wrap and freeze for at least 3 hours until set.
Crushed toffee bits sprinkled over the whipped topping in the final step.
    1. Step 6: Before serving, evenly sprinkle the Heath bits over the top of the dessert.

    Helpful Tips

    • Fill the gaps - If your ice cream sandwiches aren’t fitting perfectly in your baking dish, you can simply slice them into smaller pieces to fill the edges.
    • Work in batches - Ice cream sandwiches can melt pretty quick, so to avoid too much melting, you can unwrap a few ice cream sandwiches at a time while keeping the next batch in the freezer.
    • Work quickly, but don’t stress - Work as quickly as you can as you prepare the ice cream sandwiches, but don't worry too much if your ice cream starts melting. During its time in the freezer, the ice cream will refreeze anyways.
    • Customization station - You can incorporate a “toppings bar” where everyone can customize their dessert with their favorite candies and sauces—just like I do with my Sheet Pan Caramel Apples. It’s a fun way for everyone to get creative and personalize their treat with sprinkles, crushed cookies, chocolate chips, and more!

    Recipe FAQs

Can I make this ice cream sandwich dessert ahead of time?

Absolutely! This dessert is perfect for prepping in advance—just assemble it the day before and store it in the freezer overnight. As long as it chills for at least 3 hours, it’ll be set and ready to serve when you are.

Can I use a different sized baking dish?

Depending on the depth and size of your baking dish, you may have more room for more or fewer layers. A deeper dish will give you thicker slices but less servings, while a longer, shallower dish may allow for fewer layers but more, thinner servings.

How can I keep the dessert cold while serving?

Keep it in the freezer until just before serving, slice only what you need, and return the rest quickly. For outdoor parties, place the dish on a bed of ice to help slow melting.

Do I need to thaw the dessert before serving?

No thawing is necessary—just slice and serve straight from the freezer for best texture.
